一年中買うことができるあじですが、
実は5月から夏にかけて特に脂がのり、旬を迎えます。

そんな旬のあじをつみれにして、
お味噌汁に入れてみました。

今回は天然醸造で旨味を最大限引き出した味噌、
三崎屋醸造の「醍醐味」を合わせました。

味噌の風味が濃い「醍醐味」は
あじの強い旨味にも負けず、
おいしいお味噌汁に仕上がりました。

晩ごはんの主役にもなる、つみれのお味噌汁。

■#あじのつみれのお味噌汁（材料：2人分）

水　………　500㏄
昆布　………　10×15㎝　1枚
味噌　………　大2
(吸い口)芽ねぎ　………　適量

＜つみれ＞
#あじ　………　1尾
白ねぎ　………　20g
生姜　………　20g
大葉　………　3枚
卵　………　1/2個
塩　………　小1/4
片栗粉　………　小2
味噌　………　5g

＜作り方＞
① 0:23　鍋に水と昆布を入れ、弱火で加熱して沸騰直前に昆布を取り出す。
② 0:45　あじを3枚におろす。
③ 2:25　フードプロセッサーに②とつみれの材料を入れて攪拌する。
④ 3:37　①の出汁を火にかけ、③つみれをスプーンで一口大にして煮る。
⑤ 4:03　つみれに火が通ったら味噌を溶き入れる。
⑥ 4:50　器に盛り付け、吸い口の芽ねぎをのせる。
