Shio-jiuqu is a Japanese seasoning made by adding salt to rice-jiuqu and fermenting it. If you don’t have salted koji, use salt instead. Knead the whole chicken breast well with salt and leave it for about 1 hour before use. All you have to do is stuff it in a frying pan and steam it. Please enjoy yourself till the end today. Let’s leave it at room temperature for about 15 to 30 minutes. This is 30 minutes later. Let’s bake it. Heat a large frying pan and add oil. Arrange the chickens so that they do not overlap. If it has a skin, put it with the chicken skin side down. Arrange them so that they do not overlap, cover and steam over medium heat. Turn it upside down after about 3-4 minutes. The whole chicken is white and the back side is slightly browned. Cover again and steam on the other side for 3-4 minutes. When the chicken is cooked, open the lid and sprinkle the cheese all over. Reduce heat to low, cover and heat for 1-2 minutes until the cheese melts. The cheese melted. That’s it! Let’s put it in a bowl. Garnish with lettuce, cucumbers and petit tomatoes.
