春雨スパイシーサラダ、ヤムウンセン 実際のお店のレシピ大公開
Hello there. Today, I’m going to show you Thai food recipe. My nickname is “Chim” Thai restaurant “Phitsanulok” chef in Nagoya in Japan. Today’s recipe is ” Yum Woon Sen” Thai Spicy Glass noodle Salad “Woon Sen” meaning is glass noodles “Yum” meaning is salad. Another meaning is ” toss or mix with dressing” Here is ingredients Cilantro ( Coriander) Celery Red Onion ( Echalote) Green Onion Those are vegetables in this salad. And glass noodles (Boiled) Prawns ( Light boiled) Squid (Light boiled) Seasonings Thai Chilles (Prik Kee Noo) 2 pieces If you prefer mild spicy taste, you less 1 piece of chilli please. Garlic Oil (Roasted garlic with oil) Roasted Peanuts (Crushed) As taste, Nam pla ( Thai Fish Sauce) 1 tbsp Lime Juice 1 tbsp At our restaurant, we use limes now. Because Thai lemon ‘ Manao’ is not yellow as a lemon and taste is different as that either. If you can not find Thai lemon, I recommend you to use lime instead. Coconuts Sugar Syrup 1 tbsp. ( Water : Sugar =1:3) light boiled as syrup Ajinomoto 1/2 tsp ( As you like) Put Thai chilli in the stone mills Please cover the mills with your hand, when chilli seeds jump into your eyes, it is very very hurt! If you have stone mills, I recommend you to use it You can use knife to crush, but the stone mill makes more flavors. Let’s mix all ingredients into the bowl. Add crushed Thai chillies Add Boiled Glass Noodles ( Does not need be cold) Add Prawns and Squid If glass noodles and seafood are still warm, it is going to be wilted. So I add seasonings before add vegetables Add Lime Juice Add Nam Pla Add Coconuts Sugar Syrup Mixing Add Garlic Oil Add Peanuts Add Ajinomoto Mixing Add Vegetables Add Red Onion Add Green Onion Add Celery Add Cilantro (Half left) Another half for topping If you like micro tomatoes, you can add it It makes more flavor and extra nice sour taste.
