Introducing the ingredients: 1/4 pumpkin (250g) The weight is important, so measure it carefully Salt: 1% to 2% of the weight of the pumpkin This time it’s 250g, so I’ll make it with 1% (2.5g) 1% (light) 2% (strong) Kombucha 2% (5g) Mirin 1 tablespoon So let’s make it right away! ① Thoroughly remove the seeds and pulp from the pumpkin. Weigh it with the seeds removed. ② Cut the pumpkin into 3mm-wide pieces that are easy to eat. Cut into 3mm-4mm thick pieces to preserve the texture. It remains crispy and delicious. ③ Add the pumpkin and salt to a bowl and mix it all together. Leave it for about 20 minutes to blend in. The excess water contained in the pumpkin will come out, making it delicious. It will stand out. ④ After 20 minutes, rinse it off. Wipe off the water thoroughly with kitchen paper. ⑤ Place the pumpkin in a plastic bag. Add the kombucha and mirin and mix it all together. Remove the air, weigh it down, and let it marinate for about an hour. Adjust the amount of salt to your liking.Once marinated, it’s done! It’s delicious with the added flavor of kombucha.
