“That was delicious—I’ll be back!” Those words—handmade dishes made with care . You couldn’t make this at home, could you? Chicken and meatballs, fried sardines. A taste you can’t find anywhere else. It was delicious . For years, it’s been the “home cooking”
that has sustained prefectural employees. My purpose in life. Watching my mother’s back , helping out, I
grew to love it myself. Kumamoto City, Chuo Ward, Kumamoto Prefecture. The cafeteria next to the

Mimuro. My mother opened the shop in 1970. This is the 54th year, I suppose . She had such a kind heart . I still respect her deeply. She worked in the shop until she was 93 . She passed away at 101 . After that, I’ve been helping out here
all along. My husband was always transferred for
work, so he was hardly ever home. I raised three sons pretty much on my own. That’s the kind of place this is . I wrote the sign for the original shop . We operated here for 25 years , until
1999, when we had to vacate. This vacant house was available, so we thought , ” Mom could come over for
lunch !” We renovated only the inside, keeping the original feel. We converted a regular house into this . I’m 83 this year. This is my mother . She passed away at 101. We use Hinaku bamboo chopsticks , not disposable ones .
made from bamboo. We wash these chopsticks clean every day, then dry them. Even yesterday, despite the rain, we had 99 customers. Just for lunch, from 11 AM to 2 PM. It gets busy even in the rain . We have many customers from the
prefectural government and police, but
also from far away. Last time, someone came all
the way from Kagoshima. They heard it was delicious, came to
Kumamoto, and stopped by. They come to turn on the rice cooker ,
then go back home to hang up their laundry, and come back
here again . I try to serve freshly cooked rice to
customers whenever possible , so I cook it right up to the last minute . How many shō did I cook yesterday? About 8 shō, I think . Just for
yesterday’s lunch service . After all , there’s nowhere else running a shop like
this for 600 yen . It’s only possible because it’s my home . Customers are happy about it. Everything else is raising prices, right?
Nowadays , everything from oil to ingredients… But I don’t know how many more years I’ll do this. Half of it is service for
the customers. The part-timers all support me. Three more will come later, but when it’s
busy , we used to manage with about seven people. Now it’s five . So lunchtime is tough. One and a half
pots , making enough for 100 people …

including overseas , for a long time. We were practically living apart most of the time. So, I raised our three sons on my own . My husband did judo. Since we lived near the Kumamoto Budokan, I thought , first and foremost, I wanted
them to learn manners . Judo is like the way of the sword.

fish cakes, yam, raw eggs for binding the fish cakes—mix them until frothy . That’s how the flavor soaks in. Burdock root—we mix it into the fish cakes. For the sardine fish
cakes, the ingredients are burdock root, onion, yam, ginger . Staff: How many fish cakes come with
each set? Five . We double-fry them. If you fry them lightly first , the temperature drops. If you put a lot
of these in, the oil temperature … So we pre-fry them beforehand . With fried foods, temperature is key. See, they’re not crispy and golden yet,
right ? We double-fry them . Otherwise, if we put in like 30 of these , the

sardine fries,” and told my dad, he said, “Nah, sardines are only like 5 yen each . What’s the point?” At first, they were like 15 yen each . One
fish . We tried it out, and then it got popular. We get so many customers now , we fry
them. Otherwise , we don’t have enough time . When we start prepping , everyone’s a
pro at their station. This guy’s great at entertaining
customers. She handles cleaning and chopping. That person’s a frying veteran . I support them with my jaw, lol. When customers say, “That was delicious,
