Lately, Taco loves sleeping in his own bed When he sleeps, he looks especially sweet and gentle There’s a long to-do list waiting for me today First up—some baking, both for fun and as Chuseok gifts I’m making Tigre, a classic French baked treat “Tigre” means “tiger-striped” in French It’s named for the way the chopped chocolate melts into little speckles The method is almost the same as for financiers I brown the butter in a pot until it turns golden and nutty The moment it’s added, that rich, nutty aroma fills the air I added yellow cheese powder to give it a lovely golden hue My first batch didn’t turn out quite right The batter needed to stay warm and loose, but the open window cooled it too quickly Still, the baked results didn’t look too bad For the second batch, I worked quickly to keep the batter from cooling I also made an extra batch with a stronger matcha flavor And of course, I baked the classic chocolate chip version too I filled them with ganache I had prepared in advance For a final touch, I added a delicate sheet of edible gold The vibrant green matcha ganache made it extra pretty I wrapped each one individually in a small plastic pouch Then packed them neatly into a Chuseok-themed box A silver string tied around the box holds it all together I finished it with a traditional Korean norigae charm The sky soon turned dark under thick, heavy clouds The air felt much chillier because of it Rain or shine, every day is a holiday for Taco I started the day with a quick trip to the grocery store I picked up short ribs from Costco to prep galbijjim I’m making it ahead of time to enjoy tomorrow While the ribs are being parboiled, I prep pear and onion Slice a piece of pear and half an onion into small chunks Blend them together with about half a cup of water Strain the mixture through a cloth for a clean juice Pour the strained juice into the pot Add soy sauce, mirin, minced garlic, and dark sugar Then add the ribs and let everything simmer slowly I recently came across the prettiest kimbap It looked just like a colorful Gujeolpan-style kimbap A bit tedious to make, but I wanted to try it for the holiday You need a good base of thin egg crepes and various veggies Lightly salt and sauté julienned carrots Use chives or spinach for that lovely green hue Brown tones come from braised burdock or fish cake Season with a little sesame oil and salt I prepared nine different fillings for the kimbap The rice is shaped into small round rolls Roll each filling into small strips of seaweed The result is a bright, rainbow-colored kimbap A cafe named “Birdsong, Watersound” On a rainy holiday, I visited a traditional Hanok cafe The building itself is a registered cultural heritage site The soft rain blended beautifully with the calm ambiance I ordered tart and refreshing omija tea along with a dessert set of dried persimmon rolls, jeonggwa, and sweet jelly It was chilly, but the outdoor seating felt just right Honestly, the rain made the experience even better Later on a walk, I stumbled across some adorable ducks Baby ducks snuggled close, trying to stay warm This must be what people mean when they say “just watching is healing” Even with the constant rain, I hope your holiday was peaceful Thanks for being here with me again today
