These are sure to be a hit on the dinner table this fall. Start by combining all the dough ingredients in the caption below and mix. Cover your bowl and let it rise for 30 minutes and then we’ll be back. For first stretch and fold, we’re just going to pull the edges of the dough into the center. And after another 30 minutes, we’re going to do our second stretch and fold. This needs another 15 minutes. In the meantime, I’m going to prepare my twine for the pumpkin shapes. You’ll need three 12-in pieces of string for each roll. And make sure to either dip them in flour or soak them in some oil so that they don’t stick to the bread once it’s baked. Then just shape little rolls and tie up the string like so. Make sure to boil some water at this stage cuz you’re going to want to pour in the bottom of the oven to create steam and give that nice crust. Take them out of the oven once they’re nice and brown and hollow sounding when you tap them. Take the string off and you have these lovely pumpkins.

For 12 rolls, you’ll need:
2 tsp instant or active dry yeast
500 ml (~2 cups) warm water
1 tbsp sugar
2 tsp salt
100g (~3/4 cup) whole wheat or rye flour
500g (~4 cups) all-purpose or bread flour
Mix the ingredients together until you have a shaggy dough, then let this rise for 30 mins. Complete a stretch-and-fold, then wait another 30 mins and complete a second one. Let the dough rise another 15 mins.
Prepare 3 12-inch pieces of twine per roll, and either soak them in some oil or coat them in some flour.
Flour a surface and empty your dough out onto it. Use a bench scraper or a knife to cut into 12 pieces and shape these into rolls.
Arrange 3 pieces of twine so that they cross over each other and create 8 segments. Place a roll on top and tie the twine together around the roll. Trim any long ends.
Let them briefly rise again while you preheat the oven. Boil some water.
Score with scissors and put in the oven, pouring the water in a tray at the bottom of the oven. Bake for about 15 minutes at 215 C or 420 F. Enjoy!

if you have acess dough, you can make a bread stick, chop it into even pieces and make a little hole in the pumkin bun to make little stems for the bread once theyre all baked!!
