Hello, this is Mainichi Gohan’s mom. Today, I’ll show you how to boil pasta by soaking it in water, and I’ll show you how to make a delicious meat sauce with plenty of ground meat. Here are the ingredients.
Let’s get started! First, prepare the “soaked pasta.” Soaking pasta in water for about an hour beforehand not only significantly shortens the cooking time, but also makes it chewy and delicious. Today, we’ll use 1.6mm pasta.
If you soak it for 45 minutes in the summer and an hour in the winter,
thick noodles can be cooked in just 1-3 minutes. One serving of dried pasta is 100g. This time, we’ll use 200g for two people. Yes, it’s something like this. Pour water into the pot. You’ll need 1 liter of water for every 100g of pasta. Today, we’ll use 2 liters of water. Add salt here too. You’ll need 1 teaspoon of salt per liter of water, so
add 2 teaspoons of salt and mix gently. Now, add the pasta you measured out earlier. Fold it in half so that it’s completely submerged. Once everything is in, let it sit for about an hour. While the pasta is soaking, make the meat sauce. First, chop the carrots. Once the carrots are cut into bite-sized pieces, slice them lengthwise. Let them rest and then slice them into thin strips. This is roughly how thin it is. Cut it even finer. This is roughly how you chop carrots. Next, chop the onion. First, slice it thinly. Lightly gather the thinly sliced onions and roughly chop them. The onions in the meat sauce don’t need to be very finely chopped. Yes, this is fine. Now, heat a frying pan over medium heat. Once it’s hot, add 1 tablespoon of salad oil. Add 200g of ground pork and spread evenly. Meat sauce tastes better when it’s made with chunks of unevenly chopped ground meat.
To achieve this, I’m intentionally not stirring the meat much today. After spreading the ground meat, season it. 1 teaspoon salt A little pepper You can skip the pepper. 1/2 teaspoon nutmeg You don’t need to add nutmeg if you don’t have any, but it will taste even better if you do. Stir gently while cooking the ground meat. The oil from the meat will become clear. When the oil is clear, the meat is cooked through. Add the chopped vegetables to the frying pan after turning off the heat. If you fry the vegetables in the oil from the ground meat,
the meat’s flavor will be stronger and more delicious. Once everything is added, turn the heat back on and fry over medium heat. Homemade meat sauce is delicious with lots of ingredients like this. When the onions are translucent and cooked through, turn off the heat. Once all the ingredients are thoroughly cooked, season them. First, add 2 tablespoons of ketchup. Then, add 1 pack of canned tomatoes (approximately 400g). Once everything is added, turn on the heat and cook over medium heat. If you cook the vegetables and tomato puree together, the vegetables will become tough. So, be sure to add the tomatoes after the vegetables have softened. And frying the tomatoes in oil reduces the acidity, making them even more delicious. Stir well and simmer for 2-3 minutes. When the tomato sauce changes color from red to orange, it’s done. About an hour has passed since I soaked the pasta. The noodles have turned white and become very soft. It’s like turning dried noodles back into fresh noodles. Now, let’s put the pot on the stove. Since this water would be a waste, I’ll use it to boil noodles. However, you can also boil these noodles in prepared boiling water. The pot of water is boiling. From here, boil the pasta for 1 to 3 minutes. You should taste the noodles once after 1 minute. Then decide if they’re cooked to your liking.
There’s no set cooking time, so it’s up to you. I usually boil it for about two minutes. After two minutes of boiling,
it’s cooked to perfection, so turn off the heat and discard the water. And now the pasta is nice and chewy! Put the meat sauce you made earlier on top of the pasta. It looks delicious with all the ingredients! And now, your meat sauce pasta is ready! Don’t worry, you can freeze any leftover meat sauce! So, let’s get started! Today’s meat sauce recipe is seasoned with salt and ketchup, making it mild enough for even kids to enjoy. But the umami of the ground meat is concentrated, and you can even taste the sweetness of the tomatoes, making it truly delicious. The trick to bringing out the umami of meat and vegetables is to thoroughly fry the ground meat until all the fat is released, and then use that fat to fry the vegetables and canned tomatoes. It’s that simple, but it results in a dish that will make you go, “Wow, this is delicious!”
So, please keep that in mind. As for storage period,
if stored in the refrigerator, consume within one week. It’ll be fine for a month if you freeze it. If you freeze it, store it in a ziplock bag or similar.
Laying it flat will make it easier to thaw. You can also use meat sauce in other dishes, such as tossing it with cooked eggplant or potatoes, or mixing it with rice to make doria or lasagna. Make plenty and stock up on them.
