15 minutes for a delicious healthy dinner, I present to you, my curried coconut noodles

Let’s make dinner. I had 15 minutes of effort left in me and a loose concept for this dinner. And now it’s a recipe I have on repeat. I’m not quite sure what to call it yet, but conceptually, okay, the idea. I had a bunch of veggies I needed to use up. So, it’s broccoli, onion, bell peppers, mushrooms, ginger, garlic, etc. Whatever you have. And we’re not sweating the aromatics first. We have limited effort. So, we’re just going to cook it all down together. But here’s where it gets good. The flavor is coconut curry. So, I kept it simple. curry powder, broth, coconut milk, and brown rice ramen noodles. Couple eggs on top for some protein. And honestly, I think you should make this. That’s so good.
