Firstly, we need to prepare the cucumbers , remove the stems, this is the key point, so they have cuts in them like this, see? If you leave it like that , the flavor will blend in well and the salt will come out quickly, like this . Cut this into accordion-shaped pieces like this . Do the same with the remaining two. Add salt and rub them really hard. Rub them or mix them together. Leave them like this for 10 minutes. They ‘ve been salted and left for about 10 minutes. I think it’s best to leave them for more than 10 minutes, the shortest time is 10 minutes. Now let’s squeeze them out. I think I’ll squeeze out a lot of water from each one with kitchen paper or a cloth. After squeezing it once, would kitchen paper be better? I wonder if it will go to waste . By the way, since it’s cut into accordion-shaped pieces, if you squeeze it a little tighter it will release the water and make it soft and squishy. All the water will come out from here, so it’s easy to remove. Once you’ve drained the water , put it all into a storage bag like this. Set this aside. In the meantime, make the sauce. First, grate the ginger and grate the garlic . Break the stock pack into this and add sugar, sushi vinegar , soy sauce , and gochujang. Mix well . That’s about it. Finally, knead it together. Pour the sauce into the squeezed cucumber pack, seal it, and knead it. You can store it like this, so if you want it a little stronger, you can leave it like this for about an hour. I think it will add quite a bit. But since this can be eaten right away, I’ll take it out now. It already smells good, so pour the floating water on top as well. That’s it.
