苦瓜炆排骨:

材料:
一字排骨1斤
苦瓜2個
薑1舊
蒜頭6粒
豆豉1湯匙
辣椒仔2隻

處理:
1. 排骨,洗乾淨,擎乾水。
2. 排骨調味:
a. 生粉1茶匙
b. 糖1/2茶匙
c. 鮑魚汁1茶匙
d. 生抽1茶匙
e. 油2茶匙
撈勻,醃20分鐘。
3. 蒜頭,去皮。
辣椒仔,去籽,切粒。
薑,刮去皮,切片。
豆豉,沖洗乾淨,擎乾水。一半切碎,一半原粒。
4. 苦瓜,1開2,去囊,切去兩端硬的部分,切幼條。
5. 加入1湯匙鹽乸苦瓜去除苦澀味,揸出苦瓜水。
6. 清水沖淨苦瓜,揸乾水。

烹調:
1. 中火在鑊中燒熱1湯匙油。
2. 放薑片爆香。
3. 加入蒜頭,轉慢火,爆至金黃色。
4. 加入辣椒粒及豆豉。
5. 加入排骨,兜炒一下,加入250毫升水,加入1茶匙鮑魚汁及1茶匙豉油。
6. 冚蓋,慢火炆15分鐘。
7. 另一邊,白鑊大火烘乾苦瓜2~3分鐘。
8. 苦瓜收乾水,就可以了。
9. 放苦瓜入排骨,轉大火,炒勻,上碟。

Braised spare ribs with bitter melon:

Ingredients:
Spare ribs 1 catty
Bitter melon 2 Nos.
Ginger 1 No.
Garlics 6 Nos.
Preserved beans 1 tbsp
Red chili 2 Nos.

Preparation:
1. Spare ribs, rinse thoroughly and hang dry.
2. Season the pork:
a. Tapioca starch 1 tsp
b. Sugar 1/2 tsp
c. Abalone sauce 1 tsp
d. Light soya sauce 1 tsp
e. Oil 2 tsp
Mix well. Season for 20 minutes.
3. Peel the garlics.
Red chili, remove the seeds, then dice.
Ginger, peel and slice.
Preserved beans, rinse thoroughly, hang dry. Half of preserved beans is to be chopped well.
4. Bitter melon, divide into 2 shares. Remove the seeds inside. Cut both ends. Thinly slice.
5. Season the bitter melon with 1 tbsp salt to remove the bitter tastes, and easy to squeeze the juice.
6. Rinse bitter melon thoroughly. Squeeze it.

Steps:
1. Heat up 1 tbsp oil at medium flame in wok.
2. Fry ginger slices.
3. Put garlics, turn to low flame, fry until colour of garlics turns to golden yellow.
4. Put chili cubes and preserved beans.
5. Put spare ribs, fry for 1 minute, add 250ml water, 1 tsp abalone sauce and 1 tsp light soya sauce.
6. Cover up the wok. Braise at low flame for 15 minutes.
7. On the other side, fry the bitter melon with no oil in wok for 2~3 minutes.
8. Bitter melon has been dried up. Turn off fire.
9. Put bitter melon into spare ribs, turn to high flame. Fry well. Serve.

  2. 我嘅經驗,其實新鮮排骨同雪藏的,煮出嚟基本上係無分別,無論買新鮮的或者雪藏的,都要識得揀,用醃料跟烹調都要有心機,否則,就算用新鮮嘅都係難食!
    呢排我就用雪藏嘅柳梅豬肉來炆涼瓜,煮出嚟比新鮮排骨還要好食。
    不過,一樣還一樣,新鮮嘅魚同雞,確實係比雪藏嘅好。
    但係豬扒同排骨,新鮮定雪藏的真係冇分別,價錢方面雪藏更加化算。

    涼瓜炆排骨

    材料:
    一字排骨
    1斤
    苦瓜4個

    蔥1條

    處理:
    1. 排骨,清水沖洗乾淨,擎乾水。
    2. 排骨調味:
    a. 紹興酒1茶匙
    b. 生粉1茶匙
    c. 鮑魚汁1茶匙
    d. 生抽1茶匙
    e. 油1茶匙
    f. 糖1湯匙
    撈勻,醃30分鐘
    3. 蒜頭,去皮,洗淨。
    4. 蔥,去頭尾,洗淨。
    5. 薑,去皮,洗淨。
    6. 洗淨砧板。
    7. 薑,切片,放排骨內。
    8. 蔥,切段。
    9. 蒜頭,放入排骨內。
    10. 苦瓜,1開2,刮去囊,切去頭尾,斜刀切一片片。
    11. 加入粗鹽2湯匙,令苦瓜汁流出。
    12. 揸乾苦瓜汁,清水沖乾淨鹽分,擎乾水。

    烹調:
    1. 大火在煲內煲滾1湯碗水。
    2. 薑、蒜頭及已調味的排骨,放入煲內。
    3. 滾起後,轉慢火炆20分鐘。
    4. 炆好,熄火。
    5. 白鑊,烘苦瓜至水分收乾。
    6. 加入蔥段。
    7. 加入已炆好的排骨,炆2分鐘。
    8. 炆好,已完成,上碟,可享用。

    Green onion 1 pc

    Preparation:
    1. Spare ribs, rinse with tap water, hang dry.
    2. Season the spare ribs:
    a. Shaoxing wine 1 tsp
    b. Tapioca starch 1 tsp
    c. Abalone sauce 1 tsp
    d. Light soya sauce 1 tsp
    e. Oil 1 tsp
    f. Sugar 1 tbsp
    Mix well. Season for 30 minutes.
    3. Garlic, get it peeled. Then rinse.
    4. Green onion, cut both ends, rinse.
    5. Ginger, get it peeled. Rinse.
    6. Rinse the chopping board.
    7. Ginger, get it sliced, put in the spare ribs.
    8. Green onion, cut in equal lengths.
    9. Garlics, put in spare ribs.
    10. Bitter melon, divide it into 2 shares, remove the seeds, cut both ends, slantly cut in slices.
    11. Mix with cooking salt 2 tbsp, in order to release the bitter melon juice.
    12. Squeeze the bitter melon juice, rinse the salt thoroughly. Hang dry.

    Steps:
    1. Heat up a big bowl of water at high flame in pot.
    2. Put ginger, garlics and seasoned spare ribs into the pot.
    3. Turn to low flame after boils up, braise for 20 minutes.
    4. Braise well. Turn off the fire.
    5. Bitter melon, fry with no oil in wok until the melon is dry enough.
    6. Put green onion.
    7. Put the spare ribs, braise for 2 minutes.
    8. Braise well. Complete. Put on plate. Serve.
