Ingredients:
1 small butternut squash (about 2 cups cubed, peeled, and seeds removed)
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 cup orzo pasta (use gluten-free if needed)
3 cups vegetable broth
1/2 cup coconut milk or cashew cream
1 tsp dried sage (or 1 tbsp fresh sage, chopped)
Salt and pepper to taste
Optional: Nutritional yeast or vegan parmesan for topping
Fresh parsley for garnish
Instructions:
Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with a drizzle of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized. Set aside.
In a large skillet, heat 1 tbsp olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft.
Stir in the minced garlic and cook for another minute until fragrant.
Add the orzo to the skillet and toast it lightly for 1-2 minutes, stirring constantly.
Pour in the vegetable broth, bring to a simmer, and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
While the orzo cooks, mash half of the roasted butternut squash with a fork or blend it smooth. Stir the mashed squash and coconut milk into the skillet, along with the sage, salt, and pepper.
Add the remaining roasted squash cubes for texture, stirring gently to combine.
Cook for another 2-3 minutes until creamy and heated through. Adjust seasoning to taste.
Serve hot, topped with nutritional yeast or vegan parmesan and a sprinkle of fresh parsley.
