There are 7 nations that helped make up the Creole /CAJUN culture of Louisana. This goes all the way back to natives of the land even Slavery and the people that came from elsewhere and made Louisana home. Its a complex mixture of food techniques that is the literal way of life for us. Every one else EAT so they could LIVE. We LIVE to EAT. Every dish is authentic because it has a long rich history that comes from GENERATIONAL recipes handed down. Do your thing ma'am but please be respectful and call this.. whatever it is something else. Its very misleading and insulting. Not gumbo. Has nothing in any way shape or form to do with gumbo.Now I'm going to be the bigger person and not comment on how it probably taste but trust me the Creoles would tell you in a less polite way.And the country Cajuns would have their comments taking down lol. They have no filter ESPECIALLY when it comes to food and culture.We are a prideful people and Do. Not. Play. When it comes to our food. Food is our culture. Our culture is our food.
