the shop? This shop has been around for 27 years,
but before that, we ran it for about 4 years. My sister was there then. After moving here , she worked for a
little while too. She worked until she had kids . She worked here for about 3 or 4 years. She came thinking she’d just do a little
part-time work . Then she couldn’t leave . A 72-year-old owner still going strong .

Main Store) This shop is hugely popular for its
katsudon using thick-cut pork cooked at
low temperatures. Manager Murai-san was absent that day, but the founder was a
former sumo wrestler whose ring name was
“Chiyomatsu.” After retiring due to injury, his love for
cooking and his hearty appetite led him to
open a shop serving his favorite dish,
katsu-don . Preparing the batter . Pork cooked at low temperatures . Wanting to create a satisfyingly hearty
katsu-don, the founder developed this
method through trial and error . Trimming the fat. Seasoning . Coating in
batter, and coated with breadcrumbs . I think part of the appeal is the lively
atmosphere of the shop itself . The meat is divided into front and back
sections (the back being the premium, rare
cuts). They reportedly sell about 200 bowls a

When does the low-temperature cooking of
the pork start? It’s 24 hours (for the low-temperature
cooking), so we prepare it around 9 PM the

fried is tender and juicy . Under the cutlet lies fluffy, runny egg
and rice drenched in broth . The hearty meatiness combined with the
egg is exquisite. You can enjoy changing the flavor by
adding table condiments to the cutlet . Staff) How was the tonkatsu? Very good.
It’s incredibly delicious. This shop is famous for its tonkatsu . And I brought everyone here After the lunch rush calms down, they
prepare the pork . Preparing the pork for the next day. They carefully remove the air and seal the

final dish in the hot pot. Also for the summer version we’re about to
start, the dashiya’s dashi somen . The summer-style sudachi somen . We use it for that too. It’s incredibly delicious, right?
Miwa somen. I really love it . Somen. I see katsudon done in quite a few places
, but since we cook it once using low-temperature
cooking , coat it in breadcrumbs, and then
fry it , isn’t double-frying unique to this shop?
People often say that, but the meatiness is totally different. With sous-vide, it gets a bit ham-like, and I don’t really want that . With double-frying, the juices stay
locked inside . Wow~ The super thick katsu donburi arrives. Place the egg in the center. Taking a photo is a must. First , eat it plain. Break the egg. Mix it in and dig in. Delicious! My friends nodded in agreement… Two women came in . Ordered the Shichifuku Set Meal and the
non-covered katsu don. Made mapo eggplant. Mapo eggplant with a Japanese dashi flavor . Rice and miso soup. Just a moment,
please! Wow! Looks super delicious. Snap a photo. It was incredibly tasty. The amazing thickness was so impressive! We went with the Shichifuku Set. The mapo eggplant had a nice thickness and
wasn’t overly salty, just mild. Since it’s a dashi place, using dashi
makes it delicious . Closing at 2:45 PM . Staff: Did you train somewhere? I studied at a French restaurant . I went to university thinking I’d do
something completely different , but then I thought I wanted to run a cafe. I decided to go into food service, saved
up again, went to a vocational school , and then joined a French restaurant
company. I studied French cuisine for about 7 years . After that, I knew the owner here, so he
took me in. I’m learning and gaining experience,
including management, to eventually go
independent . (For my future restaurant) My only focus is serving food and drinks I
personally find delicious . That’s it. I’m having staff meal. Itadakimasu! With eggs, “not sealed” – the lid “doesn’t
seal” . It was an exclusive look at the
popular “Tojinai” katsu don shop where
lines form.
