    Pork Belly Bites Banh Mi
    Serves 4 | Prep & Cooking 15 mins

    1 x Coles Made Easy Pork Belly Bites
    2 x Carrots, shredded
    1 white radish, cut into thick slices
    ยฝ cup rice wine vinegar
    ยผ cup caster sugar
    1tbs salt
    ยฝ bunch Coriander
    2 birdseye chilli, sliced thinly
    4 Banh Mi Rolls
    2tbs butter
    2tbs mayonnaise

    1. Heat the vinegar, sugar, salt and ยผ cup of water until boiling then pour over the carrots and daikon. Leave to cook to room temperature.
    2. Cook the Belly Bites following the instructions on the packet.
    3. Cut your Banh Mi rolls with a hinge so one side is still attached. Spread with butter and mayonnaise.4. Add in the pickled carrot, daikon, cucumber and coriander, make sure you spread all the vegetables evenly so every bite has a good spread of the vegetables. Add the chilli of you like it spicy.
    5. Finish with an even layer of the pork belly bites and enjoy.
