    This Sweet Potato & Kale Frittata is the ultimate one-pan meal โ€” fluffy, flavorful, and packed with veggies! The creamy goat cheese and roasted sweet potatoes make every bite rich and satisfying, while kale and basil bring freshness. Perfect for meal prep, brunch, or a quick, balanced dinner!

    Ingredients:
    โ€ข 2 cups sweet potatoes, cubed (ยฝ-inch)
    โ€ข 1 tsp fresh thyme (or ยฝ tsp dried)
    โ€ข 2 tsp olive oil, divided
    โ€ข 8 large eggs
    โ€ข ยผ cup reduced-fat milk
    โ€ข ยผ cup fresh basil, chopped
    โ€ข ยผ tsp salt + pinch of pepper
    โ€ข 2 cups packed kale, chopped
    โ€ข 1 small red onion, chopped
    โ€ข 2 cloves garlic, minced
    โ€ข 3 oz crumbled goat cheese

    Instructions:
    1๏ธโƒฃ Preheat oven to 400ยฐF. Toss sweet potatoes with thyme, 1 tsp olive oil, and salt; roast 12โ€“15 minutes until tender. Lower oven to 350ยฐF.
    2๏ธโƒฃ Whisk eggs, milk, basil, salt, and pepper in a bowl.
    3๏ธโƒฃ In an ovenproof skillet, heat remaining oil. Sautรฉ kale, onion, and garlic 3โ€“4 minutes until tender.
    4๏ธโƒฃ Stir in roasted potatoes and pour egg mixture evenly over veggies.
    5๏ธโƒฃ Sprinkle with goat cheese and bake 10โ€“15 minutes until set. Slice and serve warm!
