Chickpeas with Tomatoes and Kale | Italian-Style @eatcolor #shorts #food

Ingredients:
3 tablespoons of olive oil
1 medium red onion sliced thin
1 can of drained and rinsed chickpeas
10 cups loosely chopped kale with stems removed
2 cups cherry tomatoes sliced in half
1 teaspoon salt
1 teaspoon pepper
¼ cup of red wine vinegar
½ lemon juice
Recipe:
In a large skillet or pan, warm olive oil on medium.
Add red onions and cook for 3-5 minutes until they begin to soften.
Add chickpeas and stir.
Add kale and toss.
Add tomatoes.
Add salt and pepper. Toss.
Cook for 2-3 minutes.
Add vinegar and lemon juice. Toss.
Cook for another 2 minutes on low.
Remove from heat and eat immediately or serve warm, at room temperature or cold!
Enjoy!
