【鶏肉の白ワイン煮】飲みきれなかった白ワインを使いたい時に!
Hello, it’s Kooopi. Today, we’re going to make “Chicken stewed in white wine.” Please check the description box for detailed measurements. First, thinly slice the onions. Cut the cores into small pieces. Cut the mushrooms into large, roughly chopped pieces. It’s better to wipe them with a cloth, but… Since dirt concerns me, I’ll wash them with water. Remove any tough parts with stems. Since they shrink when cooked, it’s good to cut them into a chunky, round shape. Break the king oyster mushrooms by hand. Remove any tough parts. Break them by hand. Since they are too big, cut them into thirds or so. Finely chop the garlic. Cut the chicken thighs into bite-sized pieces. First, remove any tendons or cartilage. If it doesn’t bother you, you can leave them. Now that we’ve mostly removed them, let’s start cutting. Make light incisions where there are many tendons. With this, the prep work is complete. First, let’s sauté everything except the chicken in a pot. Before turning on the heat, add about one tablespoon of olive oil. Add the garlic. Turn on the heat. Once the aroma starts to come out, add the onions, king oyster mushrooms, and mushrooms. Add a pinch of salt. Sauté over high heat until the onions become translucent. This level of sautéing should be sufficient. Then, set them aside for a moment. In a frying pan, start cooking the chicken thighs. Season with salt. Brown the skin well without moving it. Quickly cook the other side. Add pepper. Mix lightly. Turn off the heat and add them to the pot from earlier. Turn on the heat, add water to extract the umami. If there’s excess oil, please remove it with a kitchen paper. (I forgot to do that this time!!) Then, let’s prepare for simmering. Add seasonings. Turn on the heat. Once it boils, skim off any foam. Cover it and simmer on low heat for about 20 minutes. Oh! I forgot. If you have onion koji, add it now. If not, it’s okay not to add. Cover it and simmer for 20 more minutes on low heat. Finally, taste it and season with salt. It was a bit bland, so I added salt. And it’s done! Let’s plate it. Drizzle a little olive oil. Sprinkle parsley. 「鶏肉の白ワイン煮」のレシピ
【材料】(2人前)
鶏もも肉 2枚(600g)
たまねぎ 1/2個(165g)
マッシュルーム 1パック(70g)
エリンギ 1パック(120g)
にんにく 2片
【調味料】
白ワイン 200ml
塩 小さじ1/2
水 50ml
ローリエ 1枚
たまねぎ麹 大さじ1(あれば)
こしょう 適量
オリーブオイル 適量
【簡略な手順】
①タマネギは薄切り、マッシュルームは4等分くらい
エリンギは手で割いて3等分、ニンニクはみじん切り
鶏もも肉は一口大に切る
②鍋にオリーブオイル(大さじ1くらい)とニンニクをいれて
香りを出す
③タマネギ、マッシュルーム、エリンギをいれて塩をひとつまみして
タマネギが軽くしんなりするくらいまで炒める
④別のフライパンで鶏もも肉を焼く(下味の塩をする)
⑤鶏もも肉が焼き終わったら③の鍋に入れる
⑥④のフライパンの余分な油をキッチンペーパーで取ってから
水(50ml)をフライパンに入れて旨味を取り鍋に入れる
⑦白ワイン、塩、ローリエ、たまねぎ麹(あれば)をいれて
蓋をして弱火で20分煮る
⑧最後に味見をして塩で調味して器に盛ったら完成!
