an apple cake that doesn’t require any baking. It might sound too good to be true, but this is a traditional Danish dessert called or apple cake, and it’s best described as a trifle or a layered dessert. Many Danes have great memories of their grandmother or great-g grandandmother’s version of this dessert. And while our version might not be that, we can still promise it’s delicious. First, you cook down some apples with sugar and lemon juice to make the applesauce base. Then, you toast up some breadcrumbs in butter and sugar to make the crunchy middle layer. If you like, you can make the breadcrumbs from scratch. This is a super easy way to use up stale bread, or you can add crushed up cookies or biscuits. And finally, you spoon or pipe some whipped cream on top and decorate with whatever you like, sprinkles, leftover breadrumbs, or the apple peels that you’ve baked in the oven. Ingredients:
Apple filling:
925g (7 1/2 cups) peeled chopped apples
1 tsp vanilla
Zest + juice of 1 lemon
30g (2 tbsp) butter
50g (1/4 cup) sugar
Breadcrumb layer:
160g (1 cup) breadcrumbs
60g (4 1/4 tbsp) butter
3 tbsp sugar
Pinch of salt
Topping:
400ml (1 2/3 cups) heavy cream
2–3 tsp sugar (optional)
Apple peels for garnish (optional)
Instructions:
1. Simmer apples w/ vanilla, lemon, butter & sugar ~30–45 min till soft. Mash & chill.
2. Toast breadcrumbs w/ butter, sugar & salt till golden. Cool.
3. (Optional) Bake apple peels at 150°C or 300°F ~25 min for chips.
4. Whip cream to soft peaks.
5. Layer: apple mix, breadcrumbs, whipped cream. Garnish w/ crumbs & apple chips.
Serve chilled. Best fresh, but keeps 2–3 days in fridge.
