  1. Soya-Mushroom Veg Stir Fry (Gravy Style)

    1. Soak soya chunks in hot water. Squeeze and keep aside.

    2. In a pan, heat 2 tbsp oil.

    3. Add 2 tbsp chopped garlic, 1 tbsp chopped ginger, and 1 medium chopped onion. Sauté until soft.

    4. Add 1 chopped carrot and 1 chopped capsicum. Stir-fry for 2–3 minutes.

    5. Add mushrooms and the soaked soya chunks.

    6. Season with:

    1 tsp salt

    1 tsp black pepper

    1 tsp soya sauce

    1 tsp chopped green chili

    1 tsp green chili sauce

    7. Add 2 cups water and bring to a boil.

    8. Add cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).

    9. Cook until the gravy thickens.

    10. Garnish with chopped green onions.

    Serve hot with rice or noodles!
