It’s the simple joys that lift me high. Sunny days and laughter in my sky. Dancing feet, a song to sing. Heartbeats racing with everything. I don’t need much to feel alive. Just simple joys to light my life. Oh. Oh, raindrops tapping like a sweet little drum. Running through puddles just for the fun. Late night talks with friends so near. Silly little moments that I hold dear. It’s the simple joys that lift me high.

Garlic Shrimp Pasta

Ingredients:
1 pound of pasta of choice (I chose Linguine)
2 pounds of cooked shrimp
1 ½ cups of olive oil
½ tablespoon black pepper
8 tablespoons of butter
5 to 6 fresh garlic cloves or pre-diced
½ tablespoon of salt if desired
1 pinch of red peppers or more for a spicier dish (optional)

How to:
Pasta Noodles (follow instructions as indicated on the box)
Set a large saucepan on medium/low heat and add the olive oil. Add the garlic, 5 tablespoons of butter, and peppers (optional) to the oil and cook for about a minute or so. Do not let the garlic burn. Lower the heat if the pan is too hot. After simmering butter, garlic, and peppers well with the olive oil then add the cooked shrimp and simmer for a minute. If you buy frozen shrimp let it defrost before adding. And if you buy fresh, let it cook for over a minute (or until the shrimp turns pink) in the buttery sauce while covered. When noodles are ready, drain, place noodles back in the pot, add 2 tablespoons of butter, and stir. And finally, add the noodles to the pan with the butter and shrimp. Serve and SAS (Ta-dah), you have an easy, delicious, and budget-friendly meal. ENJOY!
