🍽 Simmered Beef and Burdock Root (Shigureni) Recipe 🇯🇵
A classic Japanese home-cooked dish full of umami and warmth. Perfect as a side dish or even a rice topping!

📋 Ingredients:
• Thinly sliced beef: 200g (about 7 oz)
• Burdock root (gobo): 1 stick (about 100g)
• Ginger: 1 thumb-sized piece (julienned)
• Soy sauce: 2 tbsp
• Mirin: 2 tbsp
• Sake: 2 tbsp
• Sugar: 1 tbsp
• Dashi or water: 100ml (about 1/2 cup)
• Sesame oil: 1 tsp (for sautéing)

👩‍🍳 Instructions:
1. Peel and thinly slice the burdock root, then soak in water for 10 minutes to remove bitterness.
2. Heat sesame oil in a pan, add ginger, and sauté until fragrant.
3. Add beef and cook until it changes color.
4. Add the burdock root and stir-fry lightly.
5. Pour in soy sauce, mirin, sake, sugar, and dashi (or water).
6. Simmer on low heat for about 10–15 minutes until the liquid is reduced.
7. Serve warm or cold — great with steamed rice or as a side dish with drinks!

✨ Tip: Even better the next day after flavors have soaked in!
