In a small bowl, whisk together lime juice, soy sauce, ginger, honey, and sesame oil. Gradually whisk in olive oil until well combined. Set aside.
How to Cook 🍳
Cook the Soba Noodles 🍜:
Boil a large pot of water and cook soba noodles according to package instructions.
Drain the noodles and rinse under cold water. Set aside.
Cook the Steaks 🥩:
Season both sides of the strip steak with Butcher’s Anything Seasoning, salt, and pepper.
Heat olive oil in a frying pan over medium-high heat. Sear the steak for 4-5 minutes per side for medium-rare, or adjust cooking time for your preferred doneness.
Transfer the steak to a plate and let it rest for 5 minutes. Slice thinly against the grain.
Assemble the Salad 🥗:
In a large bowl, combine bok choy, cucumber, carrot, cilantro, mint, and green onions.
Add the cooked soba noodles and pour the ginger-lime dressing over the top. Toss until evenly coated.
Plate and Serve 🍽️:
Divide the soba noodle salad onto serving plates. Top with sliced steak and sprinkle with toasted sesame seeds. Enjoy your Soba Noodle and Steak Salad with Ginger-Lime Dressing!
