This time, going to make a vegetable soup with lots of ingredients, and I will use dashi stock to make it. This time, I would like to use three kinds of dashi stock. Using these three types of vegetables makes a very tasty vegetable soup. I will also show you how to increase the flavor. The ingredients are easy to find and very simple to make. I hope you’ll have a great time. Please have a look at it. Easy recipes at home Let’s start with the ingredients for the vegetable soup. Here are the ingredients. Cabbage, onion, carrot, shimeji, potato, sausage, small tomato. Ingredients will be made with these ingredients. I’m going to make a lot of ingredients this time. Can change the type and amount of vegetables to your liking. As for the mushrooms, they also bring out the flavor of the mushrooms, so please try to include them in your cooking. Now, let me introduce the seasonings and other ingredients for seasoning. Here are the ingredients. Consommé, chicken stock, soup stock, unsalted butter, salt, pepper, water, I will use these materials. First of all, here is the biggest point of this issue. I will use three kinds of granulated dashi stock. Consomme. These are vegetables. And chicken soup, this is chicken. And the last soup stock will be bonito stock. Adding these three ingredients will increase the flavor and make it very tasty. Some may think that the flavors will fight each other, but they go surprisingly well together, so please try making it with all three kinds. And here’s the butter. And this time, we’re going to use unsalted butter. If you’re using salted butter, it’s a little bit more salty, so you’ll need to adjust the amount of water to taste. I’ll make it with these ingredients right away. Easy recipes at home Now let’s make it. First of all, I’d like to start with the vegetables. First, going to cut the cabbage. Going to remove the core of this cabbage. Going to cut this cabbage into cubes. And then cut into 1 cm widths. Cut from the direction that is easy to cut. After you cut like this, turn around 90 degrees, and then cut again in 1 cm widths. Now going to cut the cabbage into chunks like this. Then, since the cabbage has not been washed yet, please rinse it quickly with water and drain it. Rinsed with water. Cabbage is now ready to be used. And now going to cut the potatoes. First going to peel the potatoes. You can use any variety of potato you like. And then if there are any sprouts, remove the sprouts as well. OK. And then, sir, I’ll cut the potatoes into cubes. First, going to cut them into cubes about 1 centimeter wide. After cutting into 1 cm pieces, cut into 1 cm pieces again. And then I turn it around, and then I cut it again 1 centimeter wide. Cut the potato into cubes like this. Then put this one in a bowl. And then soak the potatoes in water to remove the scum. This one should be soaked in water for about 5 to 10 minutes. Then onions. Going to cut the onions into chunks as well. You can cut them in any way you like. First of all, going to cut them along the fibers, leaving the stems on, and then going to cut them into 1-centimeter pieces. Like this. And then going to rotate it around, and going to make about two incisions, one centimeter wide. And then we’re going to continue to cut about 1cm wide. When I get to the part where I made the incision, I’m going to cut it down and then I’m going to make another incision and then I’m going to cut it down again. And now going to crisp it up a little bit. Cut the onions like this. Then the carrots. Carrots are first peeled. Once peeled, the carrots are cut in half. And then cut it in half again. And then I’m going to cut it about 5 millimeters wide. We’ll cut this one in the same way. Cut the carrots this way. You can cut the vegetables in any way you like. Next, mini-tomatoes. And then the cherry tomatoes, you can wash them, and just remove the stems. That’s all you need to do with the cherry tomatoes. Then the shimeji mushrooms. For the shimeji mushrooms, I cut off the part that is attached to the shimeji mushrooms. After cutting off the attached part, cut it in half. This is the part of the shaft that’s stuck together. You have to loosen this by hand. Now you’re ready to prepare the shimeji mushrooms. Next, sausages. And going to cut the sausage into diagonal slices, roughly one centimeter wide. Like this. The rest is cut in the same way. The sausage is now ready. Easy recipes at home Now going to fry some vegetables. First of all, please put butter in the pot. And then put it on the fire. First of all, you know, stir-fry the vegetables like this, so that the sweetness of the vegetables comes out, and it’s a delicious result. I sauteed them in butter, but you can also use olive oil or other oil. You can fry them in any oil you like. When half of the butter has melted, you can start with the potatoes. Potatoes. And then going to fry the potatoes, the onions, and the carrots. And a pinch of salt and pepper. Going to fry it. Butter can burn easily, so be careful not to burn it. Stir-fry over medium to low-medium heat, adjusting the heat level as you go. When the onions are translucent, add the cabbage. And then I add the mushrooms. And then I’ll add the sausage along with it. And let’s fry the whole thing again. And I’ll get the oil out of the sausage, and the flavor of the sausage. I’ll add it to the vegetables. The key point here is that we first fry the vegetables like this to get the flavorful water out of the vegetables. And that’s how I make this delicious, flavorful soup. So fry your vegetables well first. OK. When the vegetables are about one-third of their weight and the potatoes are cooked through, it’s OK. And then I put water in here. Then you add consommé, chicken stock, soup stock, dashi stock, and mix it in here. And then I heat it over medium heat until it comes to a boil. When the skin of the pot begins to simmer, add the tomatoes. Mixes. When mixture begins to simmer, reduce heat to low. Let simmer for 1 minute. If you cook it too long, all the flavor of the sausage will run off into the broth, and the sausage itself will become dry. So be careful not to overcook it. As a rule of thumb, the skin of the tomatoes you put in should be able to peel off like this. After one minute, turn off the heat. And then, finally, I taste it and add salt and pepper to taste. It’s done. And now I’d like to put it in a bowl. Easy recipes at home Now your vegetable soup is ready. The result looks like this. Finished like this, with lots of ingredients, and looking delicious. Last but not least, I sprinkled some dried parsley for color. So, this amount will serve about 6 to 7 people in this cup. Then add water and soup stock, and when the water comes to a boil on the surface of the pot, add the small tomatoes. If you cook it longer than that, you’re going to get too much flavor out of the sausage, and the sausage itself will lose its flavor. So be careful not to overcook it. ・水 600ml
