First of all, let me introduce the ingredients for tsukune. Here are the ingredients. Enoki mushrooms, minced chicken, leeks, potato starch, mayonnaise, sugar, cooking sake, grated ginger, sesame oil, And use salad oil when baking. Tsukune is made with these ingredients. First of all, I will use 200 grams of enoki mushrooms per pack.

And ground chicken, this time we will use ground thigh meat. Can use a mixture of thighs and chicken thighs, or you can use ground chicken thighs. And here’s the key to making the tsukune fluffy: mayonnaise. Adding this mayonnaise makes the tsukune soft and fluffy and tasty even when cold.

Next, I’ll show you the seasonings and the rest of the ingredients for the toppings. Here are the ingredients. Soy sauce, cooking sake, mirin, sugar, white sesame seeds, small onions, egg yolks, I will make it with these ingredients. First of all, I will use teriyaki seasoning this time. Mix these 4 ingredients well. OK. Please mix thoroughly until there is no more feeling of sugar crunch. Let this one sit until you’re ready to use it. Now let’s continue to make the meat for tsukune. First, I cut the enoki mushrooms. Going to cut off this part that has sawdust on it.

And then, you know, going to cut the enoki mushrooms into pieces about 1 centimeter wide. Cut it like this. As for the shaft, it’s stuck together, so you have to loosen it by hand. The enoki mushrooms are OK. Please leave the shaft unraveled like this. Then the leeks. Going to chop the leeks.

You can cut them in any way that is easy to do. This is OK for the leeks. Easy recipes at home Okay, now going to combine the ingredients for the meatballs. First of all, I lightly knead the ground meat only. Then the meat sticks to each other and does not fall apart.

Now I knead it. OK. And then I’ll add enoki mushrooms here. And let’s add the green onions. Once you’ve added the ingredients, mix it up with a rubber spatula. You may knead by hand. It is OK to knead by hand.

Then I add potato starch, sugar, cooking sake, sesame oil, grated ginger, and mayonnaise. And then going to mix this well. And now ready to make the meat sauce. Now let’s roll up the tsukune. So, going to roll them up, and then going to roll them up.

When you roll it up, if you put a thin layer of salad oil on your hands, it will keep the meat from sticking to the dough. Then roll it out. So, make it about one centimeter thick. Like this Round like this. Now round the rest the same way. Finished rounding.

And then put a lid on it. and let it steam until browned. The heat is kept at this low level. I just steamed it for 3 minutes. Then I’ll open the lid. And then going to flip it over.

So, depending on where you’re baking in the pan, there are some areas that are not quite browned yet. So, if it’s not quite browned yet, you switch places with the darker browned areas.

And then I’ll put the lid back on and I’ll continue to cook it over low heat for two to three minutes. Now it’s been three minutes. I’m going to open the lid Check browning once It’s baking up deliciously. And then… going to pour this sauce that I’ve prepared for the last time.

And then turn the heat down to medium. Then simmer while stirring in the sauce. OK. When the mixture thickens and the flavors are well blended, it is ready to be served. It looks delicious. And now I’d like to put it on a plate. Easy recipes at home

Now the enokitsune is ready to be served. This is how it turned out. Finished like this, with lots of enoki mushrooms. And the teriyaki flavor is soaking in too. Finally, topped with white sesame seeds and small green onions. You can sprinkle this one on top if you like.

It turned out delicious today. This is the point of enokitsune this time. Cut off the bottom part of the sawdust, and cut the rest of the sawdust into 1-centimeter pieces. The stem part is attached to the head, so break it off by hand and cut it into small pieces.

And here’s what you need to do when you’re making the meatballs. This time I added mayonnaise to the meatballs. This mayonnaise keeps the meat tender even after it cools down, and it is very tasty. So I think it’s perfect for bento dishes too.

And knead the meatballs well so that they come together as a single ball. After kneading the meatballs well, roll them out with your hands. When you roll it up, make sure to roll it up a little bit tighter. And here’s the key to baking them. This time I steamed it on both sides.

Steam baking on both sides makes the fish very fluffy. The teriyaki sauce should be poured over the tsukune and heated until it is thoroughly simmered. I made 15 pieces of tsukune, but it depends on the size of the tsukune, so please use it as a guide.

    もしこのつくねを冷凍保存したければ、どの段階で冷凍すればいいですか?最後の味付けする前の焼いた状態を冷まして冷凍すればいいですか?お弁当によさそうなので作りおきしたいと思ってて。
