In Korean cuisine, cucumbers are used to make many variations of side-dishes (반찬 banchan). Some are made super spicy and garlicky more as a tossed-salad-like, and some are made super mild to taste. And there are many variations in between these two extremes. Today, we are making the milder/non-spicy version that is CRUNCHY and CRISPY with that fresh cucumber taste. Each bit is succulent with a burst of cucumber juices exploding in your mouth. AND THIS RECIPE IS SUPER-EASY!

FYI
Oi (phonetically “O-Yee”) 오이 = Cucumber
BanChan 반찬 = Side Dish

  1. Hi Helen! your daughter-in-law sent me over. I just love cucumber salads and dishes especially the one you prepared today. I have seen this in a sliced cucumber version but sweetened and still delicious.

  2. I made this one and the first couple of days it was quite good. By the fourth day it didn't taste good. I followed the recipe exactly, so I recommend that it's really eaten within the first couple of days. Thank you.

  3. Washed Korean cucumber with a little salt is already heaven … so all this draining water is fine but doesn't really lead to great taste …. cause it depends on personal taste and just add pepper flakes or paste or sesame oil and you already killed it and add a little sugar to make it great .

  4. I made this a few times in the past week. It’s really such a great recipe. So refreshing and tasty. Thanks so much. More Korean side dishes and pickles please!

  5. OMG….Helen I loved this recipes. I tried it omg so good and refreshing. Am snacking on it every time i head to the fridge😁😘. I even tried it with radish it just turn out to be amazing. Thank for sharing your recipe love it alot. 😘😘😘

  6. I really have learned a lot from your cooking channel … I refer your channel to alot of others learning to get healthier and wanting to cook and eat healthier. THANK YOU…
When making the pickled cucumber can I save the juice and when all is consumed can I add more cucumbers after I did the salt bath to the juice.

  7. Omg these cucumbers are sooo good. I made a batch last night and am eating it for breakfast right now (with kimchi and beef bulgogi ) sooooo delicious. My only question is can i reuse the liquid to pickle more cucumbers ??? 💙

  8. Yumm I'm so glad I found this recipe. I've made it two times already and it's so good! Very refreshing and delicious. Plan to make more throughout this summer!

  9. You are so funny! I am actually trying to make this right now. Wish me luck, the dish looks so tasty and I love the crunch! Thanks for sharing. 🥰😎

  10. Just found you , thank you for teaching me , I’ll try to make, ok
Husband make it …. I’ll be the taste tester. Love to you for all your hard work to teach . Kitty

  11. Just subscribed! Love Korean foo. Thank you! How long can it stay in the fridge? You said consume it within 24 hours?

  12. As a native Korean I recommend oigee,오이지 is really the best when it comes to cucumber. Traditional way of making 오이지 will be appreciated. Far better than cumbersome pickles made in the U.S.

  13. Made a mistake in my previous comment by YouTube. Not cumbersome but " Far better than cucumber pickles made in the U.S." is what I wrote. 오이지, oigee, is 여름의 명물입니다.

  14. Hi……I just got on your website and I got a question….You have the same pickle but there is a differen……ce. Can you explain on your cucumber pickle

  15. Hi Ellen, I'm really loving your videos! My husband has dietary restrictions, and this is perfect for him! I will remove skin and seeds and he will love this! Mahalo and Aloha from Maui!
