Boursin Pumpkin Pasta 🥰 we brought you Boursin Tomato Pasta, and Boursin Lemon pasta… and here’s the latest one with an autumnal twist! Halloween might be over – but you can still make this paste – either with pumpkin or butternut squash!

🎃 First take your pumpkin, chop into cubes, place in a bowl with a bit of water in the bottom, cover with clingfilm and microwave for about 10 mins until beginning to soften – drain the water once done
🧀 Add 2 wheels of @Boursin Cheese , 1 small head of garlic, 700g pumpkin, a drizzle of oil and herbs (we did 2 tsp sage, 1 tsp thyme, 1 tbsp oregano, 1 tbsp basil) to a roasting tin, cover with foil and oven bake for 40 mins at 180C
🎃 Remove the foil and bake for another 10 mins – until the pumpkin is soft and garlic golden and mushy
🧀 Towards the end of the cooking time, cook 350g pasta according to packet instructions
🎃 Squeeze out the garlic and mash the pumpkin and boursin using a fork
🧀 Add loads of pasta water to make it extra creamy, and add the cooked pasta – mix everything together
🎃 We like to top with crispy chorizo and black pepper to serve!
