Sausage, shrimp, and kale orecchiette✨
▪️1 Tbsp Olive Oil▪️3/4 lb. Shrimp, peeled & deveined▪️1 lb. Hot Italian Sausage, casing removed▪️1/2 Cup Shallot, diced▪️3 Cloves Garlic, minced▪️28 oz. Can Whole Peeled San Marzano Tomatoes▪️1 tsp Italian Seasoning▪️1/2 tsp Kosher Salt▪️1/4 Cup Red Wine▪️3 Cups Kale, roughly chopped▪️1/4 Cup Parmesan (plus more for serving)▪️1 lb. Orecchiette▪️1/2 Cup (or more) Pasta Water▪️

🌱Vegan Modification: Add sliced mushrooms instead of sausage and shrimp, and nutritional yeast instead of Parmesan

1️⃣ Bring a large pot of salted water to a boil
2️⃣ In a separate large pot, brown the shrimp in olive oil with a sprinkle of salt and pepper until almost cooked through then remove from the pot
3️⃣ Add small chunks of sausage and cook for 2 mins undisturbed (so they hold their form); add the shallots and garlic and sauté for 2-3 mins until shallots are tender and sausage is cooked through
4️⃣ Add the tomatoes (break them up in your hand as you put them in the pot), Italian seasoning, salt, and red wine; bring to a boil and then turn down to a simmer and simmer uncovered for 5 mins; add the kale and Parmesan (taste and add more salt if needed)
5️⃣ Boil your orecchiette until very al dente and then transfer the noodles into the pot with the sauce, reserving the pasta water
6️⃣ Add the shrimp back in and cook the sauce and noodles together over medium high heat, adding 1/2 cup pasta water (or more) if needed to loosen the sauce
7️⃣ Cook until noodles are desired texture and enjoy with fresh more parm on top!
