So deliciously smooth chicken liver pâté. Perfect on toast, for a snack or a posh starter!

Pâtés are a very typical starter for a French family. I even remember having pâté, bread and cornichons as a starter at the cantine at high school.

This is one of my go to recipe for a ready to go starter it I am hosting a dinner party. Make it the day before in tiny dishes so each guest can have their own dish. The more modern version would be served with caramelised onions and a few leaves of green salad seasoned with French dressing.

Ingredients

Pâté
400gr of chicken livers
300gr of butter
30gr of butter for the shallot
One large shallot
Garlic
Thyme
Salt and pepper

Topping
Enough cheap butter to cover all the dishes

Store in the fridge.
If uncovered, eat on the same day as cooking.
If covered with butter (sealed from air) eat within 3 days.
