Now the spring rolls are ready. I’m Tomoya Hanzawa, owner chef of Chugokusai Chirin in Tokyo. Today, I will show you a dish you can make using an air fryer toaster oven from Cuisinart. The air fryer toaster oven from Cuisinart allows you to make fried dishes without frying in oil, so you can reduce the amount of oil and remove excess fat from oily meats. It also features a wide interior, which makes it easy to use. So let’s start cooking. First, I’ll make spring rolls with shrimp and coriander. Start by seasoning the shrimps. Salt, pepper, and some egg whites. Mix them together. After that, add a little potato starch. And mix it well again. That’s all for the seasoning. Next, I’ll roll this into spring rolls. First, place the shrimp. Stretch it out a little when you place the shrimp, so it will not curl up. And put the coriander. Okay, let’s roll it up. Roll a little tighter at first. Then, put some flour dissolved in water to glue. And finally, roll it up softly to finish. Now the spring rolls with shrimp and coriander are ready to be cooked. Next, I’ll make spring rolls with taro and smoked duck meat. I have steamed the taros with the skin on for about 30 minutes to make them softer. Mash it roughly with the knife. The texture will be too smooth if you mash it too much, so just squash it lightly. And here’s the smoked duck meat. This one is smoked in our restaurant. But of course, it can also be made with the ones in the supermarket. Make it into strips. Then cut it into cubes. Now let’s roll them up. First, with the taro. And the smoked duck I just cut now. Put some chopped scallion on it. Give it a little salt to season. Now roll it up just like we did. A little tighter at first. And softly for the rest. Now it’s done. Now all the spring rolls are rolled up. So let’s start cooking using this air fryer toaster oven from Cuisinart. Put the spring rolls in the basket. This is not that you can fry foods without any oil, and you have to apply some oil using a brush so it can be baked in the oven. Apply all over. Okay, so let’s start the fryer. Set the function to AIR FRY, and bake the top side with the time set to 3 to 4 minutes. Camera: What differences did you notice between your usual deep frying through this use? Chef: Yeah, so… The problem with deep frying in oil is that it absorbs quite some amount of oil, but I think the best thing about this one is that it can fry food with the minimum amount of oil. Camera: What other ingredients can we use to make this that we can buy at the supermarket? Chef: I think it goes well with little salty foods like bacon or ham. After 3 minutes, turn them over and cook the other side as well. [Apply oil on the other side as well.] All right. Same as the top side, 3 minutes at 180°C. So this time, we’re going with 180°C. But this could vary depending on which spring roll pastry you use so watch the inside of the toaster and adjust the temperature as needed. Camera: Should I cook both sides? Chef: Yeah, since the heat source is on above, the top side will cook crispier. So I think it is better to turn it over to cook it on both sides evenly. Now let’s serve them on a plate. This is the with taro and smoked duck. And the one with shrimp and coriander. Now the spring rolls are ready. Camera: Please start with the one made with the air fryer. Chef: Okay, so let’s eat. I’ll start with the shrimp and coriander. Yeah, it feels lighter because it’s not fried in oil. But the surface is still crispy, and although it is not fried, it feels like fried for sure. Next, I’ll have the usual one fried in oil. Yeah, it’s also fried crispy as usual. But because it’s deep-fried in oil, there’s excess oil left on the paper when you look at it. So if you care about reducing the amount of oil, it might be a better choice to use this air fryer. But they are both delicious. Camera: Are there any differences in taste with the ones made with the air fryer? Chef: I think both of them serve well as a spring roll. The ones fried in oil have that oily fried taste, but the ones with the air fryer also have some sort of it, so I think it is really great for people who want to have fried dishes more healthily.
