Going to use lakanto to sweeten this pudding, so it’s going to be a very low-sugar pudding. And it’s very easy to make, just mix it and chill it. There are a few points to be made here and there, so please enjoy it all the way to the end. Please have a look at it. Easy recipes at home Let’s start by introducing today’s ingredients. Here are the ingredients. Silken tofu, unadjusted soy milk, lakanto S, soybean flour, powdered gelatin, hot water And I will use molasses for topping I’m going to make it with these ingredients. First of all, the tofu, please make sure to use silk tofu. Going to use this tofu, which is often sold in 3-pack sets. And for the soy milk, we will use unadjusted soy milk. Can use flavored soy milk if you like. In that case, please adjust the amount of sugar, etc. And as for the sweetness, we’re going to use Lakanto S to make a low-sugar pudding. As for the sugar, you can use whatever you like. I will start with these ingredients. Easy recipes at home Now let’s make it. First of all, we drain the tofu. Prepare a colander and a bowl like this. And lay out kitchen paper. And once you’ve laid out the kitchen paper, we’re going to put the tofu out on top of this. Like this. And then wrap the tofu in kitchen paper And then place a container or something on top of the tofu to weigh it down. And then we’re going to drain it for an hour. And now going to dissolve the gelatin. Put the gelatin in a bowl. And pour hot water in here. After pouring the hot water, mix it well. OK. Mix well for about 30 seconds to 1 minute. Now, at this point, it’s still a little opaque. Please leave this one here until you’re ready to use it. Then the gelatin will dissolve nicely Easy recipes at home One hour has passed. After 1 hour, I think this is how much water has drained. And the thickness of the tofu should be about half the thickness of the tofu. And then put the drained tofu in another bowl. Then use a whisk to grind the tofu Make sure you grind it thoroughly once like this. Then we’re going to use a hand blender to make this tofu even smoother. If you don’t have a hand blender, try using a fine mesh strainer. Now smooth it out. When you use a blender, I would suggest that you center it like this before you do it. Try stirring with a blender until smooth like this. It looks like this. I used a hand blender this time, but you can use a blender or food processor. And then I’m going to add the soybean flour. Shake the soybean flour before adding it. And mix thoroughly with a whisk. And mix well so that there are no lumps in the soybean flour. OK. If well mixed, add lakanto here. And mix well. Lakanto is a little hard to dissolve, so make sure you mix it well. You can taste the sweetness here and adjust it to your liking. If you don’t get that lakanto crunch, you’re good to go. Then add soy milk. And mix well. OK if well mixed. Now, going to add the melted gelatin, and if this dough is cold, when I add the gelatin, sometimes there will be gelatin bumps. So I heat up this dough once. Heat in microwave 600W for 1 minute. Heated for 1 minute. Then mix well again. If the mixture is a little hotter than human skin at this point, it’s OK. Then add the melted gelatin. Now it’s a little bit hardened, so I heat it in the microwave 600W for 10 seconds to dissolve it Heated for 10 seconds. Then put the gelatin in this dough. And mix it well. If you use a whisk at this point, it will foam up, so I suggest you use a rubber spatula or something similar to mix it. If it’s well mixed, it’s OK. And then I’ll strain this dough once we’ve done that. And that makes it very smooth. Use a tea strainer or similar to strain. Use the finest mesh possible. Now let’s strain That’s it for the pudding dough. Now I will pour it into the pudding cups. This time I will use 150mm pudding cups. Pour it in like this. This amount will make two 150mm cups. Now, it’s still a little warm, so we’re going to let it come to a boil, remove from heat, cover with plastic wrap, and refrigerate for 5 hours. Then, I want to take it out now that it has chilled and hardened. As you can see, it has solidified firmly. And when you take it out, you need a thin knife like this. And going to go all the way around along this edge. And then the bottom part is put in a bowl of hot water and soak it in the hot water for a little bit. It takes about 5 to 10 seconds. And then you put it out on a plate and shake it up and down a little bit. And then the pudding will fall down like this. Once it’s down, remove the container. This is how pulled and delicious it turned out. Now you can top this with molasses and kinako (soybean flour) to your liking. Easy recipes at home Now tofu kinako pudding is ready. So be sure to warm the dough to about the same temperature as the skin before adding the gelatin. After that, mix the mixture with a rubber spatula to prevent bubbles from forming. When you pour the mixture into the molds, strain it through a tea strainer to obtain a smoother finish. This time, it is for two 150-millimeter containers.
