    Ingredients (3servings)

    Chia Layer (base):
    * 60g Chia seeds
    * 60g vegan vanilla protein powder (you can leave it out but i wanted to add protein in this dessert)
    * 360g unsweeted almond milk (or other milk you prefer)
    * Erythritol: 15g (adjust to taste) or other sweetener
    * Instant espresso powder: 2g (or use 30g strong brewed espresso)

    Berry Layer:
    * Frozen raspberries: 300g (can be thawed slightly for easier layering)

    Cream Layer (topping):
    * 400g soy yoghurt (or other yoghurt)
    * Erythritol: 10g

    Topping:
    * Unsweetened cocoa powder: 3g (for dusting)

    Method:

    1. Prepare Chia Layer:
    • Mix chia seeds, almond milk, protein powder, erythritol, espresso powder, and vanilla extract in a bowl.
    • Whisk well, wait 10 minutes, then stir again to prevent clumps.
    • Cover and refrigerate for at least 4 hours or overnight.

    2. Prepare Cream Layer

    3. Assemble the jars:
    • Bottom layer: chia pudding
    • Middle layer: 100g raspberries per jar (300g total) or all in one big bowl
    • Top layer: soy yogurt cream
    • Finish: dust with cocoa powder before serving
