    *Pan-Toasted Tuna and Cheese Sandwich*

    Ingredients:
    For the Tuna Mixture:
    * 400g tuna chunks in spring water (drained and lightly pressed)
    * 3 tablespoons sweet corn
    * 2–3 spring onions (or chives/red onion), finely chopped
    * 1 teaspoon table salt
    * ½ teaspoon freshly ground black pepper
    * 1 teaspoon Cajun spice
    * ¼ teaspoon smoked paprika
    * Juice of ½ lemon

    For the Homemade Mayonnaise (optional):
    * 1 egg yolk
    * ½ teaspoon Dijon mustard
    * Splash of white wine vinegar
    * 150ml light-flavour olive oil (I used pomace oil)

    For the Sandwich:
    * Fresh mozzarella cheese, grated
    * Bread (preferably a whole loaf you can slice yourself)
    * Butter
    * Extra mayonnaise (about 3 teaspoons saved from the homemade batch or store-bought)

    Instructions:
    1. Make the Mayonnaise (Optional):
    * In a bowl, whisk together the egg yolk, Dijon mustard, and a splash of white wine vinegar.
    * Slowly add in the olive oil while whisking continuously to form a thick mayonnaise.
    * Set aside 3 teaspoons for later.
    2. Prepare the Tuna Filling:
    * In a large bowl, combine the drained tuna, most of the mayonnaise (save 3 teaspoons), sweet corn, chopped spring onions, salt, pepper, Cajun spice, smoked paprika, and lemon juice.
    * Mix well until fully combined.
    3. Build the Sandwich:
    * Lightly butter both slices of bread.
    * Add the following:
    * Grated mozzarella
    * A generous spoonful of the tuna mixture
    * More mozzarella on top
    * Spread a thin layer of reserved mayonnaise on the outside side of each slice. This helps the sandwich get golden and crispy when toasted.
    4. Toast the Sandwich:
    * Heat a pan over medium heat.
    * Place the sandwich mayo-side down into the pan.
    * Quickly spread mayo on the top side as well.
    * Cover the pan with a lid to help the cheese melt.
    * Cook until golden brown, then flip and cook the other side until golden and the cheese is melted.
    5. Serve:
    * Remove from heat, slice, and enjoy immediately!
