Turnip Surinagashi with Salmon | カブすりながしとサーモン

Surinagashi is typically a winter dish. I filmed this a while back, but it’s definitely a versatile dish that you can make any time. I paired this with a crispy pan-fried salmon that contrasts perfectly with the thick and velvety veg puree. Please substitute the turnip with whatever vegetables are in season.

Ingredients

1 Turnip – 150g
1.5 cup water
1.5 tsp dashi powder
1 tbsp usukuchi (light) soy sauce
1 tbsp mirin
Salmon
Potato starch
Salt and pepper

カブ – 150g
水 – 350ml
だしの素 – 小さじ1.5
薄口しょうゆ – 大さじ1
みりん – 大さじ1
サーモン
かたくりこ
塩と胡椒
