4 Colors Temari-Sushi

Ingredients

Sushi-rice
・ Rice…300g of rice grain
・ Water…380cc(About 10% less than usual)

Sushi-vinegar
・ Apple vinegar…50cc
・ Sugar…1.5 tbsp
・ Salt…1tsp
・ Kombu (kelp)…1(5cm×5cm)

Directions

1. Cook rice with 10% less water than usual (since you will be
adding the vinegar).

2. In a small saucepan, combine apple vinegar, sugar and salt to make slightly sweetened sushi-vinegar. Add kelp, cook until boil and allow to cool down.

3. When rice is ready, add the vinegar and mix them well so that the rice will not be too watery and sticky (if available, use a flat container or a sushi-oke: a wooden sushi pot).

4. Lightly round the rice into 12 balls.

Fun Toppings
(Prosciutto & Cheese)
・ Use cookie cutters to cut cheese into your favorite shapes. Place them on a plastic wrap, put Prosciutto and rice on them and make small rice balls.

(Avocado & Salmon)
・ Place sliced avocado, smoked salmon and rice on a plastic wrap. Make small rice balls.

(Shiso leaves, Dried sakura shrimp & Yukari furikake)
・ Mix rice with dried sakura shrimp and yukari (for 1/2 go: about 75g of rice, use 1 tbsp of shrimp and 1 tsp of yukari). Sprinkle some aojiso: green dried seaweed on a plastic wrap and put the rice on it. Make small rice balls.

(Flied minced eggs & Salt preserved cherry blossom )
・ Make flied minced eggs with 2 eggs and 1tsp of Shiro(white)-dashi. Put cherry blossom, eggs and rice on a plastic wrap and then make rice balls.
