【Japanese food】How to make Karaage (Japanese fried chicken) からあげの作り方 (English subtitles)

Japanese fried chicken, Karaage, is one of the most popular dish in Japan. Today, I’m going to show tou how to make Karaage and tell you some tips to make it delicious😉

本日は、みんな大好き「からあげ」の作り方と美味しくなるコツをご紹介します。

I prefer to use potato starch (or corn starch) instead of flour to make the chicken very crispy outside. It tastes good even cold.

我が家では小麦粉ではなく片栗粉を使うのが好みです。(唐揚げって言うより、竜田揚げですね)外がパリパリになり、冷めても美味しいです。

And I fry them twice, first with lower temperature(160℃) and then with higher temperature (180℃), which makes the chicken juicy😋

また、私はいつも二度揚げします。最初は低温で、いったん油から取り出して油を高音にしてからもう一度揚げます。そうすると、中がとってもジューシーになるんです。

It might be difficult to get Japanese food at the supermarket near your house if you don’t live in japan.

海外にお住まいの場合には、お近くのスーパーで日本食品を手に入れるのは難しいかもしれませんね。

But actually we don’t really use a lot of spices to make Japanese dishes. This fried chicken only needs soy sauce to flavor “very Japanese”.

でも、実は和食にはあまりスパイスは使わないんですよね。この唐揚げも、「和食」っぽく仕上げるために必要なのは「醤油」くらいです。

We use soy sauce to make various kinds of Japanese dishes. If you haven’t got one, you should get one for you. If you can’t find sake, you can use white wine instead.

醤油は様々な和食に使われていますので、もしお持ちでなければ、ぜひ揃えていただきたいですね。日本酒や料理酒が見つからない場合は、白ワインでもいいかと思います。

Ingredients
・鶏もも肉 boneless chicken thigh
・砂糖 sugar
・塩 salt
・酒(料理酒) cooking sake
・醤油 soy sauce
・しょうが ginger
・片栗粉 potato starch
