daily life, bustling with solo cooking
operations . Hiroshima City, Minami Ward, Hiroshima
Prefecture. Established 2023 . The insanely delicious
ramen shop, Happo . The shop famous for its massive green
onion ramen . 7: 07 Manager Sugita (40) arrives
carrying scallions. Lights on . A tidy kitchen. First thing in the morning , he drinks
protein. Preparing the ramen broth. Washing the pork knuckles in hot water . Learned this from someone in Kure . It’s
simple, but I’m still not that skilled yet . Removing the blood from the pork knuckles. When breaking bones, it’s pretty dangerous
and you can get injured . (That’s why) I wear a helmet. The manager cracks a joke. Transfer the knuckles to the stockpot . Seriously, it’s my best joke ever . Back fat . You can use it raw, but blanching it makes
it melt easier and really brings out the
flavor. I use stuff I blanched the day before . I was taught not to skimp on the back fat
. My soup is white, so I only put white
stuff in it . Onions. Cut them up so they melt quickly. I’ve only been at this shop for less than
a year, so I’m not exactly super confident yet but I really think cutting it is better. Onions take forever to melt, you know? Ginger The soup is super simple. Add garlic and hot water . This is definitely delicious. Why? Once it reaches this line, you just wait for it to boil . Today, I’m going all in with just this soup. Today’s showdown soup. Preparing the green onions . For green onion ramen, it’s chopping and
washing the onions . Staff: How many kilos of green onions do
you use? Like 5 kilos or so, right? We’re selling it as a selling point, so unless it’s something that makes people
think “Wow, that’s impressive,” customers
won’t come. Staff) Do you throw away the green parts? I toss these out. Some people put them in the ramen, but… Washing the scallions. Fresh, massive scallions . Drying them like this. Cutting the scallions with a machine . Alternating green and white parts. Scallion prep complete. Now we let them rest. This goes in the
fridge. Next step: resting . Staff: By the way, how old are you now, manager ? I’m 40 now. How long have you been in ramen? Hmm… One year! Okonomiyaki, um, I’ve been doing that for
15 years now. Still got a long way to go. Gotta keep
pushing . Staff) I’ve seen some reviews saying
things like , “The ramen keeps getting
better and better.” I ‘ve seen a few like that . Honestly, I’ve also seen some really sad things
written about that part . Every day after work, I eat it myself. I really made this from scratch
until morning . Starting from nothing . And now, I think it’s become the kind of ramen that
even I would want to go back for .
Seriously, I asked a senior master in Kure to teach
me a bit . Well, it’s not exactly a dream, but it’s a
job I’d like to try. Staff: What are those socks today? These? I bought these at a friend’s shop. It’s cold today, so I wore them up. Yeah , it’s a brand called “Handle with
Care.” Cute, right ? I brought these along too, and the necklace as well. WWW My goal is absolutely over 100 (balls). I’m determined to sell at least 100 . It’s about 1.5 times bigger than other
shops ‘. This one is 180 grams. I made it a bit thinner . 9: 26. Got a drink. I’m working a side gig . Headed to the
okonomiyaki place . Crossed the crosswalk and arrived at the
okonomiyaki place . Well, it’s closer so I can carry stuff
easier, and I can keep an eye on
everything . Arrived at the okonomiyaki place . Inside the okonomiyaki shop. Started prepping
cabbage! Washing Saga Prefecture cabbage. Cutting the cabbage . Cutting at 90 degrees to the fibers
cooks it better. Vertical and horizontal, along these lines . Cabbage prep complete. Making the batter. Eggs, milk. This is distilled water , you know.
Distilled water, yeah. Adding water. I really like this . My favorite flour . Before, I used the kind for cakes and
stuff, but somehow this one is easier to roll out than the foreign
kind. Well, anyway, My goal is always aiming for
100%. Mix with a whisk. Mix by hand. Let it rest for a day. Polish the griddle. Return to the ramen shop . Weekends are especially crucial. Make
two batches of soup. I really do this . The tension is different. Arrive at the ramen shop. Check the soup . When it turns white, like the quintessential pork bone broth . Isn’t it white? Amazing. Since we blanch the back fat and stuff, and there’s less redness and scum, I think it turns out great . The shop manager is satisfied with the
soup’s quality . Preparing the chashu. Take out the thawed pork . Cut the pork . Put it in the soup. Remove the fatty parts . After about an hour and twenty minutes,
check the state. If it’s cooked through, just dump it straight into the soy sauce . Chashu that’s been resting since the day
before . Thick chashu . Chashu Thick slices—I just love them
thick, you know? That’s how it is, haha. Asking about recommended menu items . Miso scallion ramen. Extra scallions . It comes loaded with an insane amount of

countless improvements?” Yeah, I mean, I went to study , heard
stories, made it myself, tasted it , had everyone
try it , and kept tweaking it until I thought, “This should satisfy
them .” I refined it to my own taste, made
it a bit smoother. Back then, I was pretty clumsy. I was clumsy. I’m
actually getting takeout today. Staff) Do you guys do takeout here ? Well, if you ask, we’ll do it. (Phone) We don’t have one on purpose . Staff) So you just say “takeout” at the
counter ? Well, I got the miso chashu , but they threw in an extra egg for free , made it a large portion, and added extra
wakame. Pretty generous, huh? Staff member clocking out! How many hours? Like, from 7 AM to 9:30 PM
? That’s like 14.5 hours, right? You gotta put in that many hours to
finish. Staff) Like, could you just do ramen shops
? Are you a two-timer? Yeah, well… Honestly, even just doing
okonomiyaki gets plenty of customers. But when I felt like trying something
different , it was like, after okonomiyaki, ramen . As long as I’m moving, I wanna work hard
at this kind of job . 14: 00 Close shop. Evening, yeah, evening. See you later. Tired, huh? Day shift’s over. Clean up thoroughly . 16:00 3-minute walk from Ramen Shop Hachifu. Established 2011. Okonomiyaki Hachifu. Just now, oil splattered everywhere and

perfect balance . It’s the best flavor! Kendo Club Captain: What makes Yatsumine’s okonomiyaki here so
delicious is the crispy noodles. But the sweetness of the vegetables really
comes through too. They even have student discounts, so it’s
affordable for us students. We really rely
on them . It’s totally different from other
okonomiyaki places. There’s no reason why , but it feels like
coming home. We only go here . Always have for three years . Club
Member: And? So the sauce and veggies fit together like
Tetris. Seriously, this place is the real deal . For okonomiyaki, it’s Happo. The shrimp … is delicious! (Blushes) An interview? That’s awesome. People have been coming here forever—young and old, teens, even guys
like me. They chat with us and say they love it. Honestly , nothing
makes me happier . As for me? I absolutely want to keep
this place going . Ramen and (okonomiyaki) … My youth flows by here… We polish off two servings per person . Pile the plates high. Stomachs full, we finish it all! 餃子の盛り付け 42:38 は、もう少し考えた方がいいと思う(笑)。美味しいのは、
