Hi everyone, I’m Naren and welcome to my kitchen. And today we’re going to revisit Chile in our budget friendly bulk cooking series for this month. We’re going to be making this Wendy’s inspired chili taco salad. So let’s go see how this all comes together. [Music] We’re going to go over all of the ingredients and we’re going to make this really quick and easy chili taco salad. Now, I am inspired by the taco salad that they sell at Wendy’s. Many of you know that my very first real world job was at Wendy’s. Their taco salad is still to this day one of my favorite taco salads because it has chili in it. They used to serve it with taco chips and all of that. Now, my taco salad is inspired by that, but mine has a few more vegetables in it. Theirs is pretty much just lettuce, chili, cheese, and chips. Um, which is yummy, but I think we can do a little bit better. The first thing you want to start with is a nice bed of lettuce. I’m going to make one for me. And what I like to do is just kind of put the veggies around the outside. Now, Rick doesn’t like cucumbers. So, well, cucumber don’t like meat. We’re not going to put any in his. I am going to put some red pepper rings. These are just those little um sweet bell peppers that you get in a bag. Hm. The baby ones. Yeah, the baby ones. That’s all good. Uh I’m going to put some cherry tomato half halves on mine. Do you want some of these? Yep. Okay. Now, I’m going to put onions on top of my chili. So, I’m going to go ahead and do the chili now. And I am honestly I just heated up about a cup of chili because I’m only going to put a half a cup on each one because you’re really going to kind of mix this up in there with everything and it’s going to become sort of like the dressing. Now, we’re going to go ahead and put some cheese. I’m going to put a little dollop of sour cream. I’m going to put onions on mine. We’ll put it just on one side of the bowl. You can You know what? By the end, by the time I eat this, I’m probably just going to crush these up. Yeah, me too. And uh put them on top. So, that’s entirely up to you. You do your chips how you like them. But there we go. That’s our lunch for today. That’s chili taco salad uh inspired by Wendy’s. I think they look fantastic and I don’t think anybody would be disappointed with that as a dinner. So, that’s that’s just another idea. I’m here to give you ideas. What can I do with this thing that I cooked a whole bunch of and how many meals can we get out of it? So, this is meal number three. Actually, it’s meal number four because we had chili the first night Rick made it. So, then we had chili dogs and we had chili stuffed baked potato and now we’re having chili taco salad and I’ve got so many more things I want to share with you with his chili. Of course, we are going to probably keep some of it in the freezer and we’ll probably have four to six meals of chili out of that batch of chili over the coming months. So, we can count that as six total meals of chili. And if we add that to the four I’ve already shared, then you know that’s nine or 10 meals already out of 16 quarts of chili. Plus, out of that 16 quarts, we took a gallon of it to church potluck one Sunday morning. So that fed a lot of people too. And we came home with very little chili. In fact, it was almost empty. So there you have it. Delicious chili taco salad. I really hope that this series is helpful and helps you open up that box in your mind that says, “What can I do besides just eat chili because that could get really old really fast.” This helps you make things a little bit different but with the same ingredient um as your base. Today we are continuing on our budget friendly, bulk cooking journey with this super simple meal maker using Rick’s Woodsman’s chili! Chili taco salad. Inspired by the Wendy’s taco salad. I worked at Wendys for a long time in high school and college and I love their taco salad, but we have raised the bar, added more veggies and homemade chili and we are going to share our way with you today! This is a great lunch or dinner and can easily be made on the fly with ingredients you have on hand and you can take this easily for lunch to work or school if you pack it just right! This is definitely a keeper, especially with the warmer summer months quickly approaching!
Taco salad is a favorite! Whether you make yours with taco meat or like we do with chili, everyone loves their own version! I have yet to meet a taco salad I didn’t like. Beef, chicken, shrimp, you name it, I love it this way or fajita style/ Chili taco salad is a great way to use up leftover chili. Especially if you are trying to stretch your dollar and your chili! You really only need a half cup per salad, ladled over a bed of lettuce, to make a lovely, substantial serving. I served mine with lots of veggies. cucumber dices, red pepper rings, onions, you could add jalapenos, olive slices or anything you love to put on a taco. We topped ours with some shredded cheddar and sour cream along with tortilla chips.
I know we love a taco salad in a taco bowl, but most of the time we end up not eating that tortilla bowls and tossing it. So what sense does that make? I love the chips because you can eat the salad like a dip or you can crunch them up and mix them in like a crouton! Everyone has their own idea of taco salad bliss, so you do you!
This will make meal number four so far using the chili. We ate it the night Rick made it, took a gallon for potluck supper at church and then packaged up the rest for the freezer. We had chili dogs and chili stuffed potatoes and now chili taco salad. I have more coming soon! You need to also remember that we will have 4 to 6 meals of just chili. We usually make a giant batch of chili twice a year. Sometimes I can it and sometimes I pop it in the freezer. We eat off of that 16 quarts for 6 months or so and so with that in mind, you can take that four meals and add on another 4 and we have 8. I have even more ideas, at least 2 more to tickle your fancy that I will be bringing you very soon. I can think of a bunch! So stay tuned for those.
