【男の自炊】#244 豚肉の西京焼き（低温調理） “Grilled Pork with Saikyo-miso (Low Temperature cooking)”
低温調理器で豚肉の西京焼きを作ってみました！
仕上げにフライパンで焼き目をつけています。
なお、低温調理器はアイリスオーヤマ製「LTC-01」を使用しています。

【材料】
・豚肩ロース肉：450g
・塩胡椒：適量
・西京味噌：45g
・水：大さじ2.5
・醤油：小さじ2
・ごま油：適量
【作り方】
１．豚肉を包丁の背で叩き、塩胡椒を振る。
２．西京味噌、水、醤油を合わせ、豚肉の両面に塗り込む。
３．フリーザーバッグに肉を入れ、水の中で空気を抜きながら密封する。
４．低温調理器を63度・1時間20分で設定する。
５．設定温度に達したら湯の中にフリーザーバッグを入れる。
６．フライパンにごま油をひき、肉の両面に焼き目が付くまで焼く。

I made Grilled Pork with Saikyo-miso (Low Temperature cooking)!
I browned it in a frying pan.
The low temperature cooker I use is LTC-01 made by Iris Ohyama.

[Ingredients]
-pork butt : 450g
-salt & pepper : proper quantity
-saikyo-miso : 45g
-water : 2.5 tbsp
-soy sauce : 2 tsp
-sesame oil : proper quantity
[Recipe]
1.Chop the pork with the back of a knife and season with salt and pepper.
2.Mix Saikyo miso, water, and soy sauce, and coat both sides of the pork.
3.Put the meat in a freezer bag and seal it while removing air in water.
4.Set the low temperature cooker at 63 degrees for 1 hour and 20 minutes.
5.When the set temperature is reached, put the freezer bag in the hot water.
6.Heat sesame oil in a frying pan and stir-fry the meat until both sides are browned.
