Rainbow Soba Salad✨

I find it really satisfying to enjoy a meal that has the colors of the rainbow because oftentimes those bright vibrant colored foods are also the healthiest and most nutritious this soba noodle salad is so delicious with those crunchy vegetables the Sesame soy sauce you’re gonna love this one it is so so good

For the Salad:▪️3 Bundles Soba (~10 oz. / 270 g.)▪️1 Red Bell Pepper, sliced in thin 2” strips▪️1 Persian Cucumber, sliced in thin 2” strips▪️1 Carrot, peeled and sliced in thin 2” strips ▪️1/2 Cup Shelled Edamame▪️3/4 Cup Purple Cabbage, Shredded▪️3 Scallions, sliced thin at an angle▪️

For the Dressing:▪️1/3 Cup Soy Sauce▪️3 Tbsp Sesame Oil▪️1/3 Cup Unseasoned Rice Vinegar▪️1 tsp Sugar▪️2 Tbsp Sesame Seeds▪️

1️⃣ Bring a salted pot of water to a boil and add the soba; cook for 3 mins (or longer if you don’t like a chewy noodle, however, they will continue to soften a bit after you remove them from the water) and then drain and run under cold water with some ice cubes to cool them down
2️⃣ Remove the ice and dry off the noodles with some paper towel, combine with the rest of the ingredients for the salad
3️⃣ Whisk together the ingredients for the sauce and pour over the salad; mix
4️⃣ Top with some additional sesame seeds and enjoy!
