    Itadakimasu Recipe #108 Monday morning. Making dashimaki tamago, simmered hijiki, vegetables soaked in soy broth, and nori on the rice. And salmon… Monday’s grilled fish bento. After a holiday, Monday always means a grilled fish bento. I leave the cooking to the grill, and it feels so easy. The usual simmered hijiki. The bento sides are just simple Japanese home cooking. Haha. A swirl of oil in the pan, add hijiki and carrot. Seasonings are mirin, soy sauce, salt, and sesame. Even if I make extra, I can use it for dinner or freeze it. Next, vegetables soaked in soy broth. Just grill the veggies and soak them in mentsuyu. Simple, delicious, I really love it. These are summer vegetables, Manganji peppers. Not spicy at all. While the vegetables are still hot, I soak them in the mentsuyu. The mentsuyu is made with mirin, soy sauce, and dashi. With this, Japanese home cooking is basically perfect! Haha. An essential for any bento is dashimaki tamago. Dashimaki tamago is an egg dish I could eat every day! Ingredients: 4 eggs, 4 tbsp dashi, 1 tbsp mirin, 1/2 tbsp soy sauce. The sweetness of mirin is enough—no sugar needed. I strain it 2–3 times through a sieve, then cook in 4–5 batches. Don’t worry about making it perfect. Even if it breaks, it’s fine. Even if it falls apart, you can fix it later. Haha. Since the kitchen stove became IH, I thought I should replace my cookware for IH… But I still use my copper pan on a portable gas stove. Haha. This square copper pan is perfect for making dashimaki tamago. I roll it in a sushi mat and let it rest a bit. With some grated daikon, I just want to eat it right away. Rolling it like this keeps the shape nice. It’s fine as it is. Turn on the rice cooker. Finally waking up… my brain’s starting to work. From here, I pick up the pace! Take the rice soaked in water out of the fridge and turn on the rice cooker! Next, grilled fish. Kasuzuke can burn easily, so I check the cooking carefully. Looks like it’s cooked just right today! The dashimaki tamago is nicely shaped too! I’ll cut it into 4 thick pieces. I love eating dashimaki tamago big bite at a time. The dashi just bursts all over in your mouth. Alright, bento sides are done! The rice is ready too. Ah, I should quickly wet the bento box with water before using it. Like this, wet the inside with water… Redo it just in case. Haha. This way, the rice won’t stick. Steaming hot rice… looks so good already. Put some salted kelp on top of the rice. Cut the nori to fit the bento box shape. Make it a “nori bento.” Round the corners to fit the bento box. Since the nori shrinks on the rice, cut it slightly larger. Make small holes in the nori so the bento is easier to eat. Here’s where the fun part of making a bento starts. Where should I place each side dish… so exciting! Should I have used a bigger bento box? Nah, the sides are just big. Haha. Let’s pack it full, almost hiding the nori bento! Even the pickled plum is big. Haha. Done! It’s quite heavy. Wet the inside of the lid too before closing the bento box. Thank you for watching!       シンプルなお弁当が一番だけど、どれも手間がかかっていますね!あたしはなかなか出来ません。
