Cauliflower Crust Spinach & Artichoke Pizza

Cauliflower Crust Spinach & Artichoke Pizza Crust Ingredients:
3 Cups shredded cauliflower (1 small to 1/2 medium cauliflower)
2 cloves garlic, minced
1 large egg
1 Cup shredded parmesan cheese
1/2 tsp dried minced onion
1/2 tsp sea salt
1/2 tsp black pepper Preheat oven to 425 degrees. Grease pizza pan/baking sheet, or top it with parchment paper. Shred cauliflower in the food processor until it resembles fine crumbs. Place shredded cauliflower and minced garlic in a microwave safe bowl. Cover and cook for 8 minutes. Drain and let cool enough to touch. Using a clean kitchen towel or cheesecloth, squeeze out excess water from cauliflower to get it as dry as possible. Return cauliflower to bowl and stir in remaining ingredients. Shape crust into desired shape, keeping it about 1/2 inch thick. Bake for 20 minutes, or until golden. Meanwhile, prepare pizza topping. Topping ingredients:
1 pkg frozen spinach, thawed
1 14 oz can artichokes, drained and chopped
4 oz cream cheese, softened
1 Cup shredded parmesan cheese
1 Cup shredded mozzarella cheese Place spinach in a microwave safe bowl. Cover and cook on high or 5 minutes. Drain and let cool enough to touch. Using a clean kitchen towel or cheesecloth, squeeze out excess water from spinach to get it as dry as possible. Return spinach to bowl. Mix with artichokes, cream cheese, and parmesan cheese until well combined. When crust is prebaked and ready, top with a thin layer of olive oil (1 Tbsp). Spread topping to evenly cover crust. Sprinkle with mozzarella cheese. Bake for 15 minutes or until cheese is melted and bubbly. Broil for an additional few minutes to brown the top, if desired. Let rest for a few minutes before slicing into wedges and serving.

  1. WOW, this looks so delectable but I need a big pizza to eat, maybe a 14 inch. I will try this, with maybe some cauliflower, potato ,Parmesan cheese and a little cornstarch to rise it. Yummy!!!! Namaste
