It is a simple stir-fry that is made by baking lotus root in butter and entwining it with soy sauce. Butter soy sauce goes very well with the crispy lotus root. Click here for materials. Let’s clear k and others. Let’s cut the lotus root. Wash the lotus root thoroughly with a scrubbing brush. Cut off the black areas on both ends and peel. You can use a kitchen knife or a peeler. Cut it to a thickness of about 1 cm. You can use the thickness you like. Expose to vinegar water. Put lotus root in water, add about 15 ml of vinegar and leave for about 10 minutes. This uses umezu, but any vinegar is ok. After leaving it for a while, take it out. Wipe off the water with a thick paper towel. Heat the frying pan to warm the oil. Baking with butter alone will cause the butter to burn, so use butter and oil. Dissolve 25g of unsalted butter. If you use salted butter, reduce the amount of soy sauce added at the end. Add the drained lotus root one by one. Be careful as the oil may splash from the lotus root hole when you put it in. Also, 200g of lotus root cannot be baked at one time, so it is baked in two parts. If all the lotus roots are in it, you don’t have to take it out. When it gets brown, change the direction. Take it out when both sides are burnt. It became a good brown color. Please choose the degree of roasting as you like. Bake to your liking. Take it out of the burnt one and bake the rest in the same way. When all is burnt, wipe off the remaining oil. Wipe it off with a thick piece of paper. Put the roasted lotus root back in and entangle with soy sauce. Add 22.5 ml of soy sauce and mix roughly. If you use salted butter, change the amount of soy sauce from 7.5ml to 15ml. It is also delicious to add chopped pepper here. It goes well with sprinkles of chili peppers after it’s done.
