It is officially fall, which means pumpkins, pecans, squash, sweet potatoes, and today we’re going to kick it off with this pumpkin pie loaf, which is so easy to make, so moist, and goes with literally everything. So, to kick things off, we’re going to start with our wet ingredients, which will be our pumpkin puree, our sugar, vegetable oil, eggs, and vanilla extract. You’re going to mix that in well. Then you’re going to go ahead and get started on your dry ingredients, which is your flour, your baking soda, baking powder, salt, and your pumpkin pie spice. For your dry, you’re going to go ahead and fold it in. You don’t want to over mix this. And of course, I’m going to be using one of my Nordicware pans. Literally obsessed. And then you’re going to spray it down with your favorite non-stick. I like to use the Pam with some flour. And y’all look at this release. Never fails. And once my loaf was done cooling, I went ahead and added my glaze. I made a simple glaze here. It was just powdered sugar, heavy cream, vanilla extract, along with a dash of that pumpkin spice. And you add as much or as little liquid as you want. It just depends on how thick you want your glaze. And y’all look at this. This came out so good. I literally make it every single year. Recipe:
• 1 cup pumpkin puree
• ¾ cup sugar
• ½ cup oil (or melted butter)
• 2 eggs + 1 tsp vanilla
• 1 cup flour
• 1 tsp baking soda
• ½ tsp baking powder
• ½ tsp salt
• 2 tsp pumpkin pie spice
Quick Steps:
1️⃣ Mix wet (pumpkin, sugar, oil, eggs, vanilla)
2️⃣ Mix dry (flour, soda, powder, salt, spice)
3️⃣ Combine & pour into pan
4️⃣ Bake 350°F for 40–45 mins. Cool, slice, enjoy 🍂✨
