VEGAN SCHOOL LUNCH IDEAS! [ Easy, Healthy, Oil Free ]

hey everyone it’s Caitlyn and welcome to another video I’m super excited because today I’m going to be sharing five easy school lunch ideas with you guys all these recipes you can make ahead of time you don’t need a microwave and they’re all oilfree and vegan which is super important to me so first we’re going to be making a chickpea salad sandwich so you’re going to need some cooked chickpeas you can either use canned or you can make your own we’re also going to need some celery some cucumber and some red onions so we’re going to chop all of those up into tiny pieces and then we’re going to make the dressing for our salad which will have black pepper Dijon mustard and hummus you can use store bought or I made my own so first you’re going to add your chickpeas to a large bowl and mash them up with a fork you want to mash them pretty good because you want the texture to kind of be like a chicken salad so the chickpeas are a bit smaller as you can see here then you’re going to add all of the chopped veggies and mix that all together then you’re going to add the hummus the mustard and then you’re going to stir that all together to make a uniform mixture and then taste that see if you like it or not personally I prefer mine with a little black pepper so I’m adding it here and then I just mix that in as well and here’s an awesome closeup of the texture I think it’s pretty similar to like a chicken salad but without the cruelty and you can eat the chickpea salad alone but personally I like to eat it in a sandwich so for that you’ll need some sandwich bread and greens and pretty self-explanatory just add your spinach or whatever other green you want and then put the chickpea salad on there pack it in real good then just put your sandwich together and slice it for school and I just want to say I would definitely pack snacks along with this lunch as well as all the other recipes in this video remember guys it’s super important to eat according to your appetite and to nourish your mind and your body now next we’re going to be making a balsamic pasta salad so for this you’re going to need 8 oz of whatever pasta you want and you’re going to cook that pasta in a pan obviously you need water as well then for the sauce we’re going to be using some marinara sauce some balsamic vinegar dried basil black pepper and oregano so in a large bowl you’re going to add 1 cup of the pasta sauce then we add in 2 tbspoon of balsamic vinegar then you’re going to add in the dried herbs and some black pepper to taste then mix that all up and set it aside and we’re going to make our pasta salad a little healthier and add some veggies so you can use whatever you want but I decided to use some cucumber Tomatoes red pepper and red onion so once your pasta is cooked drain it and put it in a bowl and then immediately you want to add the pasta marinade that we made so the pasta doesn’t dry out and stick together so I’m stirring that in here then you’re going to let your pasta cool down to room temperature so it doesn’t like accidentally cook some of the veggies but once it’s cool just add all of your vegetables in and give that a good mix and this makes a very large portion you can easily eat it throughout the week so when you’re ready to pack it for school I put it into a smaller bowl and then here I’m adding a small handful of fresh greens because I like greens with my pasta but I wouldn’t add it ahead of time cuz they would probably Wilt so I would just do it the night before but yep just put it into a tupperware and take it with you school for an awesome lunch and here is a closeup of the pasta in a beautiful Bowl so next we’re going to be making a roasted veggie and quinoa salad so for this I’m going to use a fresh ear of corn a small sweet potato and some cherry tomatoes we’re going to roast the sweet potato and I’m also going to be adding some quinoa and black beans to the salad so in a large bowl add salad greens of your choice I’m using a blend here then you’re just going to add in all of the ingredients that I just mentioned and recently for my salad dressing I’ve actually really been enjoying using barbecue sauce and it may sound weird but you need to give it a try so I just pour a little bit into a bowl and add some water to thin it out so it’s more of a salad dressing consistency so I mix that all together pour it on top of my salad and then I just mix everything up and this is super easy to take to school as well just put it into a larger container seal it up and there you [Music] go next we’re going to be making a sushi Bowl so for all Sushi bowls you essentially only really need cooked rice of your choice and a Nori sheet which gives it the sushi flavor these are the Nori sheets I use but if you don’t have Nori you can still make this it just won’t taste exactly like sushi so then you really just add whatever fresh vegetables that you have in your fridge personally I use some cucumber some carrots and some red pepper and then finally it wouldn’t be Sushi if you didn’t add some delicious avocado I made it into an avocado Rose you obviously do not have to then here I’m topping it with some sesame seeds and I like to eat my Sushi bowl with some sauces so personally I like liquid aminos and sweet chili sauce and you could easily put this into a little Tupperware or just pour it on your veggies and eat it at school and I think it goes without saying but you don’t have to make your sushi bowl look this pretty because in reality you’re just going to mix it up any anyways at school and it’s still going to taste delicious so finally we’re going to be making what I call a loaded nbj now for this you’re going to need whatever sandwich bread you like personally I use Ezekiel Bread you’re also going to need some jam and any Nut Butter of your choice I’m using almond butter here and this is pretty basic first you’re just going to spread the jam and nut butter onto your bread but I know what you’re thinking guys don’t worry this is not just a boring sandwich we’re going to make it fun and add toppings so I am adding some fresh banana slices to make it a little more sweet then I decided to add some chopped nuts to give my sandwich a little extra crunch some cinnamon to make it a little bit more zesty and spicy and who doesn’t love cinnamon and then finally I’m adding some dried raisins but you can really use whatever toppings you have in your fridge and switch it up and keep it fun so like any sandwich we’re just going to close this little bugger up and chop it up and I’m curious do you guys cut your sandwich on a diagonal or straight down let me know in the comments but here is a closeup of the sandwich super easy super fast to make and yeah just put in a Ziploc ||| CHICKPEA SALAD SANDWICH |||
(Makes 5-7 Sandwiches)
* For the Chickpea Salad:
2 cups of cooked chickpeas
1 cup chopped celery
1 cup chopped cucumber
1 cup chopped red onion
½ cup hummus of choice
3 tbsp dijon mustard
Fresh cracked pepper, to taste
* For the Sandwich:
Bread of your choice (I used Ezekiel Bread)
Greens of your choice (I used Spinach)

||| BALSAMIC PASTA SALAD |||
(Makes 2-4 Servings)
8 oz pasta of your choice (I used Banza Chickpea Pasta)
* For the Sauce:
1 cup pasta sauce (I used an oil-free one from Whole Foods)
2 tbsp balsamic vinegar
1 tsp dried basil
1 tsp dried oregano
Fresh cracked pepper, to taste
* For the Salad Veggies:
1 cup chopped cucumber
1 cup chopped tomatoes
½ red bell pepper
¼ medium red onion
1 handful of fresh greens, per serving (remember to add this in only the night before!)

||| SWEET POTATO AND QUINOA SALAD |||
(Makes 1 serving, but you can easily double or triple this!)
2 large handfuls of greens of your choice (I used a blend of arugula, spinach, and kale)
1 fresh ear of corn
1 cup chopped cherry tomatoes
1 sweet potato, roasted (*To roast, chop into pieces and bake at 400F for 35 min)
½ cup cooked black beans (or any bean you have on hand)
½ cup cooked quinoa (rice or couscous will work as well)
Barbecue sauce + water for dressing, or dressing of your choice

||| SUSHI BOWL |||
(Makes 1 serving, but you can easily double or triple this!)
* Note: You can really make this bowl however you desire, but here’s what I added to mine:
1 cup cooked brown jasmine rice (any rice will work)
1 nori sheet (similar to what I have: http://amzn.to/2cqw7cj )
½ avocado
½ red pepper
2 large carrots
½ large cucumber
Toppings: Liquid Aminos, Sweet Chili Sauce

||| LOADED NBJ |||
(Makes 1 serving)
* Note: this sandwich is pretty small compared to the other meals, so I personally would make two of them or make sure to pack lots of other lunch snacks as well!
2 slices bread of your choice

Nut Butter of your choice (I used almond butter)
Fun toppings of your choice (I think you get the theme here..)
^^^ I used sliced banana, chopped almonds, cinnamon, and raisins, but you could also use fresh strawberries, cacao nibs, chopped cashews, maple syrup, fresh mint, etc…

I found your channel like 2wks ago , the first video I saw was you living on poverty line , where you lived on a $1.50 a day 😉 gosh you made me wanna change my ways lol ! like seriously ; I never usually watch the vegan influencers/channels bc I never understood veganism but I have to say , you are making me think and making me wanna start my kids on this path. 😉 love your vids and I aspire to be like you ! doubt I'll be able to do it , buying organic food is costly 🙁 especially when only living on a minimum wage. 🙁

  6. Chickpea sandwich salad if a fave of mine – making it without the vegenaise blows my mind! Thanks for the ideas. An idea l'll offer to you is to very finely chop some cranberries to add to the mix. And if you want it chewier add chopped almonds.
