First, let’s start with the ingredients for the pudding dough. 3 Tiger Bamboo tea bags, 4 eggs, 680cc of milk, and 105g of sugar. These are the ingredients for caramel sauce. 95g sugar and 40ml water. I took the opportunity to prepare toppings. Fruit, mint, and powdered sugar. This time I will make whipped cream with bamboo charcoal powder. I prepared 3g of bamboo charcoal powder, 20g of sugar, and 200ml of fresh cream. Make caramel sauce. Put sugar and water in a pot. This pot contains water. This water is for the boiling water that will be poured into the caramel at the end. This amount of water is the amount of caramel sauce of your choice for each cup x 8 cups. Add sugar. Add water. Light the fire. Reduce heat to medium. Shake the pot to make sure everything is melted evenly. Prepare hot water at the same time. Please adjust the heating level according to your preference. After that, the remaining heat will warm it up, so stop heating. Pour in the boiling water, but it’s dangerous, so pour it all at once while guarding it with a lid. The caramel is ready. Once it has cooled down, cool it in the refrigerator. Make the pudding dough. Add eggs. Add sugar. Mix. Pour the milk into the pot. Add tiger bamboo tea. Boil for about 5 minutes over medium heat. It has a nice scent of tiger bamboo tea. After 5 minutes, turn off the fire. Use a strainer to remove the tea leaves. Now that I’ve finished adding it, I’m going to strain it. Strain while pressing the tea leaves. Let cool. Mix the egg mixture with the milk in which the tea leaves have been boiled. Cover with aluminum foil. Prepare to steam. Always wet the steamer basket with water before using it. Wet the steaming cloth and wring it out. Fill the pot with water until about 8-9 minutes deep. Boil water. Once the water has boiled, set up the steamer. Steam on low heat for about 30 minutes. While steaming, make the bamboo charcoal cream. Add the fresh cream to the bowl. Add sugar. Next, add bamboo charcoal powder. Bamboo charcoal powder is a finely powdered powder made using domestically produced bamboo and baked in a clay kiln. It is said to have an adsorption effect and improve the intestinal environment. I like to add it to my milk, but Taketora staff puts it in their coffee every day. Finally, add bamboo charcoal powder. Stir with a mixer. Mix until you reach your desired consistency. 30 minutes have passed. Check the steaming level. Please be careful as it is very hot. It’s not steamed yet. Steam again while checking the situation. Another 30 minutes passed. It’s stuck! The tiger bamboo tea pudding is complete! After removing from the steamer, cool it in the refrigerator. Although there were bubbles this time, the contrast between the two layers of caramel and pudding fabric is beautiful.
