Savory Breakfast Veggie Loaf #shorts

In this video, we’re going to make a delicious savory veggie breakfast loaf that is perfect for those who want to start their day with something healthy and filling. This loaf is prepared similarly to a frittata.
It consists of cheddar cheese, red bell pepper, mushrooms, broccoli, and an egg mixture seasoned with herbs and spices. On top and the bottom, it is layered with thin slices of potato which gives it an extra crunch. This recipe is perfect for those who are looking for something different from their usual breakfast routine. You can also eat this dish warm or at room temperature.
INGREDIENTS
• 6 Eggs
• 1/2 cup Shallots (sliced)
• 2 cups Broccoli Florets
• 2 cups Mushrooms (sliced)
• 1 cup Red Bell Pepper (diced)
• 1/2 cup Sun-dried Tomatoes
• 2 cups Cheddar Cheese (shredded)
• Salt/Ground Pepper (for taste)
• 1 cup Yukon/Yellow Potato (Sliced thinly using a mandoline slicer)
• 1/2 tsp Nutmeg (grated)
• 1 tsp Dried Thyme
• 1 tsp All seasoned salt
• 1 cup Heavy Cream
INSTRUCTIONS
• Sauté sliced shallot in a skillet over medium-high heat for 3 minutes
• Add broccoli florets and cook for 2 minutes
• Add sliced mushrooms and cook for a minute
• Add diced red bell pepper and cook for 2 minutes
• Season with salt and ground pepper and set aside.
• In a mixing bowl, combine 6 eggs, heavy cream, all seasoned salt, thyme, nutmeg, and 1 tsp of ground pepper. Mix well with an electronic hand mixer for 2 minutes at high speed.
• Cover the loaf pan with parchment paper and brush cooking oil on the bottom. Place the sliced potato in the pan. Add a layer of cheddar cheese (1 cup).
• Add half of the vegetable filling and a layer of sun-dried tomatoes and pour half of the egg mixture
• Add another layer of cheddar cheese (1 cup) on top
• Add the rest of the filling and the egg mixture
• Place slices of potato on top. Sprinkle all-seasoned salt on top.
• Bake at 350 deg. F. for 45 minutes or until the egg has hardened.
