Radicchio is another of those things that most people either love or hate due to its bitter flavour… But I am willing to bet that most everyone would enjoy it prepared this way! Scorched on a hot griddle then topped with crumbly blue cheese and toasted walnuts, then drizzled with honey, balsamic glaze and extra virgin olive oil and sprinkled with thyme and ground dried orange zest… It’s a perfectly balanced combination! Bitter, sweet, sour, savoury and crunchy all at the same time, with a hit of freshness from some nice peppery rucola. This salad is serious stuff! And seriously delicious!
