【出汁いらず!】香ばしい炙り親子丼 Oyakodon with Seared Chicken / Chicken & Egg Rice Bowl
Sprinkle salt on the both side of a chicken thigh and let it sit for 10 minutes to season and to make a dehydration to remove the smell of chicken. Thinly slice a spring onion. Cut Mitsuba parsley as a topping into a bite size pieces. It’s also good to use coriander instead of Mitsuba parsley. Remove the excess water from the chicken thigh with paper towel after 10 minutes. Put a grill on the stove and heat it.
Heating the grill well before cooking avoid to stick the chicken thigh to the grill. Once the grill has heated up, grill the chicken thigh. Grill the both sides until the surface slightly burnt. This little charcoals on the surface add a savory flavor as Umami when you eat it. Put the skin side down and cut it into a bite size pieces. Use 2 eggs for 1 serving. Break 1 egg and keep the egg yolk of the other egg aside. Mix the eggs lightly not to mix too much. Put Sake into a pot and boil it to remove alcohol. Add soy sauce and sugar. Add the spring onion and the grilled chicken and then cook them on low to medium heat. When the chicken is cooked, add the egg mixture. Put the egg white first with chopsticks to the whole pot. When the egg white is half cooked, turn off the heat.
Add all the egg mixture and put a lid to cook it with remaining heat. Prepare a bowl of rice. Mix the egg yolk and soy sauce with the rice to make egg yolk rice. All that’s left to do is to plate. Thank you for watching!

もちろん鶏は炙らなくともこのレシピでシンプルな親子丼も作れますがおすすめはやっぱり炙り。
ポイント:
①鶏肉に塩を薄く当て(10分程)下味をつけると共に脱水させ臭みをとる
②鶏肉は少し焦げがつく位までしっかり炙る
③卵黄と醤油をご飯に混ぜ下味つける、おかずとご飯の馴染みが良くなり味にコクを演出し食べた時の味のバランスも良くなる
材料: 【1人前】
酒 70cc 沸かしてアルコールを飛ばす
醤油 25cc
砂糖 15g
卵 2個
(卵黄一個はご飯と混ぜる)

This recipe bring out Umami of chicken to make Oyakodon without Dashi/Japanese broth. You can also cook it without searing chicken but I surely recommend you to sear.
