Lauki Kofta with wilted greens roasted beet & goat cheese salad

This is an Indian dish that I LOVE. It’s zucchini patties in a spicy tomato sauce. I put the recipe in my other video, well I will just put them both here also. Enjoy!

Recipe for Lauki Kofta/Spicy Zucchini Patties in Tomato Sauce

2 C peeled & grated zucchini 5-6 T besan flour
1/4 tsp garam masala 1/4 tsp chili powder
1 finely chopped green chili 3-4 T ghee; salt as required

Squeeze all juice out of lauki and put aside. Mix all of the above and shape into small round balls. Heat oil in a pan and fry until they are evenly golden brown. You can get 7-9 out of this amount.

Paste: Combine 2 large tomatoes, 1 medium onion, 1 green chili, 1 inch ginger, 4-5 garlic cloves, 2 T cashews in Vitamix or blender that purees, blend until smooth.

Gravy: Remove oil from Koftas pan, keeping only 1-2 T. Fry 1 tsp cumin seeds, then add the paste. Fry for 9 min. Then add: 1/4 tsp (or less) chili powder; 1/2 tsp turmeric, 1 tsp coriander, 1/3 tsp garam masala. Stir until the oil leaves from the sides of the pan. Add lauki juice and 1 C water to paste. Simmer 9 minutes, lastly add fried kofta. Garnish with chopped cilantro.

Serve with any naan or other flatbread. We had Lavash, which is Middle Eastern flatbread, today, so that’s what we ate.

Recipe for Warm Lentils, Wilted Greens, Roasted Beets & Goat Cheese

2-3 beets, cut into half inch slices 3 C packed chopped greens (chard, spinach, kale)
3/4 C black (French) lentils 1 T balsamic vinegar
2 T olive oil 1/4 C plain goat cheese
1/2 red onion, diced 2 T chopped fresh basil
3 garlic cloves, roughly chopped

Preheat oven to 425. Put beets on lined baking sheet, drizzle with olive oil and roast 25 minutes, until tender. At same time, cook lentils for 25 min. Heat 1 T oil over medium high, saute onion 3-4 minutes, turn heat down to medium, add garlic and cook 2 min. Lower heat to low; add chard and wilt 2-3 minutes. Season with salt and pepper. Add cooked lentils to skillet, add beets and splash with vinegar. Sprinkle with cheese and herbs.

Also note that in today’s video I omitted the lentils from our greens salad. It’s wonderful with or without them.
